Abolone, Maitake Mushroom, Fennel. Besides from the Abolone being incredibly fresh, the soup had a sensationally rich but pure ocean body to it. A dish that regards the Abolone as its sole heroine. I was very excited to try Ryohei Hieda's dishes after taking a tour with him and the team to a local farm outside of Bangkok. They were the most courteous people with a keen curiosity of local cuisine and interest in Thai ingredients. Although, upon finding myself on their doorstep, I had little idea of what to expect! This was the second dish of the 12 course menu.
