Three years ago, we embarked on a journey to every corner of Taiwan to deliver a simple message: Taiwan has no better friend than the United States. We learned a lot about Taiwan, met countless fascinating people, and had a lot of fun along the way. We were elated that so many of you (more than 97,000, actually) kept us company on Facebook for the duration of the ride, and I hope that you discovered a few things about America and had a few laughs, to boot. I’m often asked how we kept our page fresh and interesting. Well, it takes a village, as they say. 我到美國接受了星島中文電台的訪問,當中談及了公民抗命、DQ事件、民主自決等等,最後節目被改名(刪去了「民主自決」的字眼),甚至被下架。自今,星島中文電台仍未有解釋原因。
節目內容和編排,包括解釋民主自決的理念,也是電台一方建議的。如果星島因為政治敏感而將節目下架,為何當初要如此建議?再者,每個人也有談及自己政治主張的權利和自由,也有權不同意或作出批評,作為媒體,何必如此懼怕,要自我審查?
星島中文電台必須盡快清楚解釋,及把節目重新上載網頁,我們需要的是媒體,不是政權的喉舌。

==== Press Release: A protest against political censorship by Sing Tao Chinese Radio (AM1400) ====
Agnes Chow 周庭, who was disqualified in the Hong Kong LegCo by-election in January this year, was invited by Stanford Hong Kong Student Association to attend the Cantonese Awareness Week in mid April. Northern California Hong Kong Club had coordinated with the hosts of a current affairs talk show 焦點訪談 of Sing Tao Chinese Radio (AM1400) to arrange Agnes Chow and another ex-Scholarism member appearing in the 4/17 (Tuesday) show.
Everything went smoothly and there were good interaction among the host, the guests and the audience. As usual, the program recording was archived in the show web site (http://www.chineseradio.com/…/%E7%AF%80%E7%9B%AE…/cm-f09-10/) in the same afternoon.
Alerted by a friend, however, we noticed that the recording of this particular episode has gone through sequences of editing and censorship afterward.
1) The title of the episode has changed from "04/17/2018 香港眾志常委周庭闡述香港自決主張" to "04/17/2018 訪問香港眾志常委周庭".
2) Starting from 4/19 (Thu) afternoon or earlier, the link of this episode no longer works while all other older and newer episodes work just fine. (See the attached screen capture: singtao_0421.png.)
In fact, we found out only the MP3 file of this episode (http://archive.chineseradio.com/Archive/C20180417_09-10.mp3) is removed or renamed. The episode one day before (http://archive.chineseradio.com/Archive/C20180416_09-10.mp3) and one day after (http://archive.chineseradio.com/Archive/C20180418_09-10.mp3) are still accessible.
3) We notified the host on 4/19 (Thu) about this issue. Later on, we filed a formal complaint through its official contacts with email and online message board. Not only do we not get any official response, but the operation to block this episode also seems to step up.
4) Starting from 4/23 (Mon) afternoon or earlier, even the web page of the whole talk show archive is removed (screen capture: singtao_0423.png) and a new archive page is created (screen capture: singtao_0424.png). In this new page, however, the 4/17 episode disappears and all other episodes have no title. Besides, this talk show is missing in the archive page of all cantonese programs (screen capture: singtao_cantonese_0424.png). All these appear to be a cover-up for the removal of the episode involing Agnes Chow.
So far, we do not receive any official explanation. Based on the sequences of events, the only logical conclusion is that the blocking is an intended political censorship and not a technical error.
Let us be clear that we had had good working relationship with the hosts in the past. We appreciated their openness and professionalism to invite different spectrum of view points to their program.
We suspect this post-censorship is an intervention from the senior management of the Sing Tao Group, as the political leaning of the owner and the editor in chief of the Sing Tao Group is well known.
We have to ask the Sing Tao senior management:
- Why are you so afraid of a 21-year-old activist has to say?
- The director of HK ETO in San Francisco was willing to attend the panel discussion in Stanford on the very same day (4/17) to debate Agnes Chow head on. Where is your courage?
Although the majority of the mass media in Hong Kong has been influenced directly or indirectly by mainland China or pro-establishment interest, it is a whole different matter when such political censorship happens in the United States. According to the Foreign Agents Registration Act, an organization and persons have to disclose the related activities and finances if they act "at the order, request, or under the direction or control" of a foreign power. As such, we would like to remind our media friends in the United States about the potential consequence of your action.

今年一月在香港立法會補選中被奪去參選資格的香港眾志常委周庭,應史丹福大學香港同學會的邀請,到訪灣區參加四月中旬的廣東話週。北加洲香港會協調安排了周庭與另一位前學民思潮成員,於4月17日(星期二)在星島中文電台(AM1400)「焦點訪談」節目中接受現場訪問。
訪問過程順利,主持人、來賓和聽眾互動良好。當日節目重温一如既往,當天下午即存檔在節目網站(http://www.chineseradio.com/…/%E7%AF%80%E7%9B%AE…/cm-f09-10/)。
然而,一位朋友稍後注意到當曰節目重温連結出現了問題,她把這事情告知我們。我們開始跟進,發現該連結經過一系列的編輯和疑似審查:
1)當日節目重温標題,由原先的“04/17/2018 香港眾志常委周庭闡述香港自決主張”,後被改為“04/17/2018 訪問香港眾志常委周庭”。
2)從4月19日(星期四)下午或更早的時候開始, 當日節目重温連結失效,然而所有其他較新或較舊的節目重温連結仍正常工作。(參閱屏幕截圖:singtao_0421.png)
我們發現只有這一集的MP3語音文件(http://archive.chineseradio.com/Archive/C20180417_09-10.mp3)被刪除或重新命名。 之前一天(http://archive.chineseradio.com/Archive/C20180416_09-10.mp3)和之後的一天(http://archive.chineseradio.com/Archive/C20180418_09-10.mp3)的文件則完好無缺。
3)4月19日(星期四)下午,我們通知星島中文電台主持人有關事宜。之後我們再依正式途徑,用電郵和網上留言投訴。我們不但沒有得到回覆,星島對該節目的屏閉動作反而更進一步。
4)從4月23日(週一)下午或更早的時候開始,整個「焦點訪談」節目的原有重温網頁亦被删除(參閱屏幕截圖:singtao_0423.png),而新建了一個重温網頁(參閱屏幕截圖:singtao_0424.png)。在這個新的網頁中,4月17日消失了,而其他日子亦沒有題目。另外在羅列所有粤語節目的網頁中 (singtao_cantonese_0424.png),「焦點訪談」亦不見了。種種動作,似乎是對周庭訪問重温被消失作掩飾。
到目前為止,我們沒有收到星島中文電台的任何解釋。根據事件的發展時序,唯一合乎邏輯的結論是,封鎖是有意的政治審查,而不是技術上的錯誤。
我們一直與「焦點訪談」節目主持人有著良好的工作關係。我們讚賞他們以專業及開放的態度,邀請不同的觀點的來賓到他們的節目發表言論。
我們認為這次審查是源於管理高層的介入,星島集團主席和總編輯的政治傾向是眾所周知的。
我們必須問星島集團管理高層:
- 為什麼你們如此害怕一個21歲的年青人的言論?
- 舊金山香港經貿辦主任,就在同一天(4月17日)願意出席史丹福大學的香港問題討論會,面對面與周庭同場討論。為何你們沒有這個勇氣?
儘管香港傳媒近年常因中國大陸或親建制勢力的影響,而直接或間接的進行政治審查。但要在美國進行這樣的政治審查,則要面對一種完全不一樣的環境。根據美國“外國代理人註冊法”,如果一個組織和個人,在外國勢力的指揮或控制下行事,他們必須披露相關活動和財務聯繫。我們想提醒身在美國的媒體朋友,注意你們的行為可能引起的後果。

【2017烈酒大賽回顧(布魯塞爾世界酒類競賽烈酒評選)】
〖台灣在世界烈酒舞台,繼續發光發熱!〗
布魯塞爾世界酒類競賽烈酒評選(Spirits Selection by Concours Mondial de Bruxelles),是全球最富盛名的烈酒賽事之一。台灣今年在此大賽中,再次獲得佳績,所獲獎牌數量為參賽前五強。第一名是法國(本土44面,海外屬地53面),其次是中國(47面)、墨西哥(27面)、義大利(25面)與台灣(22面)。
台灣雙金獎1面(金車噶瑪蘭 Kavalan Solist Fino Sherry Single Cask Strength)、金獎11面(得獎者包括金門酒廠、信義鄉農會、台灣菸酒公司、國立高雄餐旅大學)、銀獎10面(得獎者包括金門酒廠、台灣菸酒公司、優米企業、金車噶瑪蘭、國立高雄餐旅大學、霧峰農會酒莊)
〖關於本屆賽事〗
布魯塞爾世界酒類競賽烈酒評選,巡迴世界各地,今年邁入第17屆,在智利拉塞雷納(La Serena)舉辦。
本屆將近一千兩百種參賽酒款,來自54個不同的國家,66位來自22個不同國家的評審團成員,利用8月22日到24日三天的時間,進行評審工作。
評審團每六人一桌,每桌由大會指派一名評審團主席(俗稱桌長),來自台灣的陳千浩與王鵬,都是本屆的評審團成員,並雙雙兼任評審團主席。此外,王鵬也擔任大會《烈酒風味評判準則》(Spirits Sensory Guidelienes)編纂計劃總召集人及主編,這項計畫從兩年前萌芽,一年前正式開始籌備,並於本屆順利推出,成為本屆賽事亮點之一。
根據慣例,各類組最優勝酒款會由十餘位評審團主席,共同選出本屆特別提點酒款。本屆獲此殊榮的品項共有四種:
1. Rhum Blanc Agricole Karukera Canne Bleue by Marquisat de Sainte-Marie Sas, Guadeloupe
2. Château du Tariquet Bas Armagnac Folle Blanche 12 years, France
3. Mezcal Don Aurelio Reposado by Don Aurelio Lamas, Mexico.
4. Ekiss Vodka 2012 by Domaines Francis Abecassis, France.
〖《烈酒風味評判準則》登場〗
我在布魯塞爾世界酒類競賽烈酒評選擔任評審委員,因為相關經驗豐富,擅長品評與風味描述,並通曉多國語言,因此受到該項賽事主辦單位委託,主導烈酒評比標準與風味準則的起草工作。我在這項編纂計畫裡,擔任總召集人與總編輯。這套準則在日前已經如期編纂完成,並將於本年度開始正式使用於國際烈酒大賽。
我在2016年九月,從法國波爾多進修葡萄酒結業,並在上一屆烈酒大賽結束後,就開始著手研擬準則編寫架構,集結國際評審團成員們多年累積的經驗,共同編纂烈酒風味評判標準,作為評審團的評分參考依據。
今年烈酒大賽的評審日程為期三日,在8月22日大會開幕典禮上,將正式發表這部《烈酒風味評判準則》(Spirits Sensory Guidelines),目前這部作品以英文發行。
〖我受邀擔任評審團主席〗
這次大會也邀請我擔任評審團主席,這不是我第一次在酒類競賽裡擔任這項工作,但在烈酒評選裡卻是第一次。評審團主席分為兩個等級,一是評審總長,通常只有一位;二是評審桌長,通常每桌都會指派一位。
我曾經受邀擔任地區級啤酒競賽的評審總長,但由於已經安排前往另一個國際賽事擔任評審,所以很可惜沒有機會接下這項富有挑戰性的任務。評審總長負責規劃賽前評審相關工作配置,確保品評順利,並在賽事進行當下,隨時待命解決突發狀況。
一個賽事的評審團,通常必須拆分成不同桌次,每個桌次可視為一個獨立的評審團。評審桌長,就是這個獨立評審團的主席,通常我們私下都稱為table captain(桌長),但是正式的說法是president of jury(評審團主席)——位階聽起來威風凜凜,但其實就是桌長。身為桌長,任務內容簡單許多,基本上只要確保該桌工作進度沒有落後,文件資料填寫齊全。但是我擔任桌長時,也希望同行專家都能透過討論,從彼此身上學到一些東西,並確保評選結果符合應有水準素質。
在我擔任桌長的經驗裡,同桌的專家們都滿欣賞我的作風,相信我這次也能從同桌的同事們身上,得到同樣的回饋。

各位評審團的同仁們,
As a judge, we never stop learning. I believe you feel the same way. There are so much to explore in the world of spirits. The diversity of our drinks and cultural richness behind them are fascinating; yet, its complexity can be frustrating sometimes. No one is a perfect judge. However, we try to do our best and fulfill our mission.
我們身為評審,總是在不斷學習,相信大家都有同感。烈酒的世界,是無止盡的探索。烈酒種類的多樣性與豐富的文化背景,非常引人入勝,然而卻也非常複雜,有時甚至讓人感到挫折。沒有人是完美的評審,但是我們依然盡力而為,完成所託。
And we are lucky being in this family of Spirits Selection, because fellow judges always share thoughts and knowledge at the judging table. I was inspired to collect valuable comments, and compile them into Guidelines, so that such information become available for each member in the team, rather than limited within one single jury at a given table.

Hopefully, these guidelines will help you in the challenging task as spirits judge, particularly when you are faced with certain categories that you are less familiar with. We recommend you spend some time on the “Users’ Guide.” You can find it in the beginning of your booklet. Appropriate use of these guidelines will be helpful in your judging, and will ensure our mission in promoting great culture of fine spirits.

Let’s imagine that each bottle or each sample is a person, and it tries to express itself in its own language. To better communicate, we have to learn its language. The diversity of spirits can be compared to diverse languages, and we managed to bridge over that gap, by revealing the secret of “how to speak its own language,” in other words, how to evaluate the spirits from their unique cultural backgrounds. This is what these guidelines are for.
讓我們來想像一下,你所面對的每一杯烈酒樣本,都是一個人,在品評的當下,它試著用自己的語言跟你溝通。若是我們不懂它的語言,那麼就無法充分交流。烈酒的多樣性,可以比擬為不同的語言。這本《烈酒評判準則》就是要幫助你跨越語言的鴻溝。我們想要確保你能「用它的語言和它溝通」,亦即「用每種烈酒獨特的文化、生產背景與自身標準來評判品質」。
In these Guidelines, we aimed at pointing out common features and frequent faults within each category, and these are often useful tips for judges. We believe, your expertise paired with this powerful tool of Guidelines, will enhance your performance as a judge. I hope you enjoy using these Guidelines before or during judging. Discussions are encouraged, since guidelines themselves are a compilation of these useful comments. When you find them, write them down and send them to us. They are much wanted and desired.
這部準則的編纂重點,在於指出類型特徵與常見缺陷,對於評審工作來說,這些會是非常實用的重要提示。我相信,以各位既有的專業能力與經驗,再搭配使用這部準則,將能讓你如虎添翼。你可以在評審工作開始之前,或者評審工作進行的當下,翻閱類型描述相關內容。在評審工作進行時,我們也鼓勵同桌評審之間彼此討論交換意見。這部準則的編纂初衷,原本就是要收集這類分享內容。而當你發現值得分享的重點,也請記錄下來並告訴我們,我們很需要你的回饋意見。
This document is designed to evolve over time, based on your remarks and suggestions. Some pieces are still missing, but I believe they are about to come, thanks to your feedback. Please capture any thought that arises during judging, and let’s share with the whole team in the next edition. Ever-improving guidelines will help reproduce quality judging, which is of utmost importance for the reputation of the renowned Spirits Selection, where we are united as a family and whose reputation is also ours.
《烈酒評判準則》將根據每一屆評審團的回饋意見進行調整。某些烈酒類型在這個版本裡付之闕如,但是我相信在諸位的協助下,這部準則的內容將漸趨完備。請各位在評選工作過程中,將自己的想法記錄下來,我們才有機會將這些珍貴的內容編進下一個版本裡。不斷修訂改進這部準則,能夠幫助維繫每屆賽事評審工作品質穩定,而這是頗負盛名的布魯塞爾世界酒類競賽烈酒評選項目,能夠維持國際聲望的重要因素之一。我們身為這個團體成員,當然榮辱與共。
I feel so proud and happy being part of the project. Although it was me who took initiative in the creation of these guidelines, were it not for the support of competition organizers and help from fellow judges, the project would not have been carried out with success. We would like to thank all those who have devoted their time and expertise to producing this first version. My special thanks go to Mr. Thierry Heins, who supported this project with great knowledge on spirits and particularly on human resources. HI 大家好, 我是Ashley, 老媽喜歡到酒樓飲茶, 趁今天是閒日, 人數較少, 而我又放假, 就去飲茶吧!
當有位子而茶水又準備好時, 第一時間都會先洗餐具 (如碗筷、杯等),主要目的是怕消毒得不夠徹底‧此外,用茶洗餐具還可以洗走油膩,而且第二泡茶也較好喝呢!
那麼我們吃了什麼呢?
1.咸菜豬肚
我爸很喜歡吃這個, 現在我也被他感染了。它鹹鹹的、還有黑胡椒及蒜頭的味道, 可除去豬肚的內臟的味道, 挺不錯喔!
2. 咸水角
老媽很喜歡吃, 每次到酒樓都要點!
3. 餃子
也是老媽喜愛的點心
4. 濃湯浸菜心苗
期間我們也叫了一碟菜心,別小看這碟簡單的菜心, 當飲茶時, 菜心是很重要的, 因為蔬菜能帶走油膩感。

個人超級推介這碟紅棗糕, 因為非常吸引! 個人建議一家要趁熱吃, 因為這才能看到它的紋理。如果能在它很熱的時候分出一層層的話, 它就是一碟好吃的紅棗糕。

Hi , this is Ashley. My mum loves to yum Cha in restaurant. As today is weekday & I am dayoff, it’s fine to enjoy Yum Cha since there’s not so many people here.
While table ia available & tea is ready, we will wash the dishes by hot water & tea first, to make sure all the dishes are clean enough. Also, the second tea will be tasted better since oily can be washed away by making use of first tea!
So what will we going to eat?
1. Salt Pork Bellies
My dad loves this one. And now I like it too! It tastes salty with black pepper and garlic flavor, which can be removed the odor of pork bellies!
2. Salty dumpling
Everytime when my mum comes restaurant, she orders this dim sum.
3. Jiao Zi
My mum loves it too!
4. Cabbage
We also order this cabbage. Even though we can cook this vegetable at home, it can take away the oily feeling when eating dim sum. So cabbage is very important and it must be ordered!
5. Red Bean Bread
6. Jujube cake
I strongly recommend this dim sum. It’s very delicious! you can see its texture and its layers can be separated when it is hot. So it must be hot to eat.
Except dim sum, tea is also drunk to take away the oily feeling when yum cha.
When someone (no matter old or same generation) is pouring the tea for us, we will knock the table to say “thank you”.
Each dot represents each dim sum, so that we will know what type of dim sum we ate. Then we will take this card for paying the bill.
Yum Cha can be spend 2-3 hours. It is a good chance to chat and share something with your family.
