I'll admit, lunch for us most days is either at a cafe or on-the-go. 😅
Today, we both felt so special when mama put together a quick lunch at home. ❤️ Looks fancy but really only took 15 minutes - chop, assemble, toast and done!
If we're being even more honest, I didn't plan this meal, just scavenged around my fridge and see what I could throw together! 😂 I love wraps (Mission onion and chive is our favorite) because they are so versatile and keep well in the fridge. Use them for yummy wraps, enchiladas, burritos, thin pizza crust etc.
We had leftover roast chicken, a block of mozzarella cheese (wrap your cheese in tin foil and store in a container in the freezer so it stretches longer!), a box of spinach and I made a quick salsa w cucumbers, tomatoes, cilantro, lemon juice. I used green onions instead of yellow onion so it has less of a bite but still has the onion-y flavor! Use chili padi if you're not having it w teeny tiny. Would have loved some mango or avocado in it too but my Doraemon fridge didn't have any. 😅
Roll it all together and toast while you clean up!
