如果你有飲過Tequila既話,其實你已經不知不覺飲過龍舌蘭蜜。產地墨西哥,野生龍舌蘭需要生長15至20年至成熟,開花之後六個月就會整棵枯死。農夫見到開花就知道可以收成,但唔係用曬成棵啊,而係剪曬啲葉,只留番最底既球果(cone)泥製作糖漿。Espadin係現時最常用既品種,成熟期需要8到10年,另外常用既Madrecuixe更加要20至25年!除左係Tequila既主要成分,龍舌蘭蜜亦用於墨西哥既Mezcal酒。而1公升的Mezcal要用過35公斤既龍舌蘭先製造到。近年愈來愈多人選擇用龍舌蘭蜜取代蔗糖同蜂蜜。下一次再隊Tequila,記住滴滴皆辛苦呀!

If you have had a Tequila before, you have drank a syrup derived from a plant called Agave. Native to Mexico, a wild agave plant takes 15-20 years to mature. Naturally, once the plant ripens and flowers it will then gradually dry off and die within 6 months. For farmers, flowering is a signal that the plant is ready for harvest. All the leaves will be cut off and only the bottom cone is used for making the syrup. The most common agave species commercially is Espadin, which takes 8-10 years to mature, while another popular species Madrecuixe takes 20-25 years. Apart from using in Tequila, agave syrup is the main ingredient of a Mexican alcoholic drink called Mezcal, and it takes over 35kg of agave plants to produce 1L Mezcal. It is also gaining popularity as a sweetener in place of sugar or honey. The next time you have a sip of Tequila or Mezcal, you may think about just how precious it is!
