【關於相似字、同類字--以「烤」為例】#翻譯工作心得
最近正在翻譯一本飲食相關的書,書中出現許多有關「烤」的動詞,主要出現的有:bake、toast、roast、grill和broil。這些字都不會太難,但是究竟有何差別呢?每個字會存在,必定是與其他詞彙有相異點。這篇就來帶大家認識這五個動詞,並談談翻譯時所使用的策略。
要正確認識相似字,除了查字典外(而且一定要是英英字典),個人還會利用「語料庫」。語料庫簡單來說,就是一種蒐集某一語言的資料,有點類似語言的搜尋引擎,只要輸入某一字詞,就會出現該字曾經使用於某些文本中的真實語境。這些文本通常是具有權威性的報章雜誌期刊,像是紐約時報。透過語料庫的搜尋結果,可以知道某個字通常是怎麼使用在現實生活中的。
首先,讓我們來看看這五個動詞在著名的韋氏英英字典中個別的意思(例句取自奇摩字典):
bake - to make (food, such as bread and cake) by preparing a dough, batter, etc., and cooking it in an oven using dry heat
EX: We bake bread and cake in an oven.
toast - to make (as bread) crisp, hot, and brown by heat
EX: She toasted bread for breakfast.
roast - to cook (food such as chicken, potatoes, or beef) with dry heat in an oven or over a fire
EX: He roasted a chicken for dinner.
grill - to cook (food) on a metal frame over fire
EX: Grill the burgers for eight minutes each side.
broil - to cook by direct exposure to radiant heat
EX: They broiled a turkey over charcoal.
接著,試著用知名語料庫COCA (Corpus of Contemporary American English) 搜尋這些動詞,並各舉出搜尋結果的三個例子:
bake -
1. Grate fresh ginger (dried may not be as potent) into stir-fries or even bake it into cookies.
2. Defrost frozen spinach in a casserole dish, top with shredded Parmesan, and bake at 350 degrees until the top is golden brown.
3. Bake peppers until breadcrumbs are golden, about 10 minutes.
toast -

1. Brush one side of each pizza with 1 tablespoon olive oil, season with salt and pepper, and grill with oiled side facedown on grates for 9 minutes.
2. That's why I grill lamb, usually a butterflied leg.
3. Grill or broil the meat 6 to 7 minutes, and then freeze the cooked beef for 5 minutes so you can slice it thinly with ease.
broil -
1. Arrange the sliced meat on a baking sheet, top with the vegetables, and add a few thin shavings of Gruyere cheese on top. Broil 1 minute.
2. Season fish with salt and pepper. Arrange in single layer on sheet pan lined with nonstick foil. Broil until cooked through, about 6 minutes.
3. Slice zucchini lengthwise into 1/8 " -to 1/4 " -thick slices with mandoline or sharp knife. Working in batches, arrange slices in single layer on prepared pans and coat tops with spray. Broil 6 " from heat until golden, 5 minutes.
最後,參考「母語人士」的說法,也是很可靠的。以下說法來自某位網友,當然,這只是其中一個我找到的:
bake - In the case of cakes or casseroles the food fills the pan so that you get even cooking but the food does not dry out. Also used as a general term for cooking almost anything in the oven.
toast - Generally the heat is both top and bottom (or side to side in a toaster) and it is a dry cooking method with a food that has little moisture, bread for example.
roast - Higher temperature with the intent to caramelize the outer portion of the food to bring out flavor. An example of this would be roasting a piece of meat, or vegetables. The pan is large enough to allow heat to reach most sides of the food that is being cooked.
grill - The heat comes from the bottom to cook the food.
broil - The heat comes from the top to cook the food.
綜合以上,可以發現這五個動詞在「處理食材」、「烹調時間」、「使用器具」等面向差異甚大,歸納如下:
bake - 食材通常是麵糰,用來烤麵包、糕點、餅乾等,但也可以指魚肉、燉菜、馬鈴薯等多種食物;烹調時間長;使用器具為烤箱。
toast - 食材通常是水份極少的麵包(如法國長棍麵包、吐司);烹調時間通常較短;使用器具基本上為烤麵包機;此外,這個動詞最終目的是將食材烤至金黃、酥脆。
roast - 食材通常是雞、豬、牛等,以一大塊肉或整隻動物的形式,也可指馬鈴薯、花生、栗子、咖啡豆、堅果類包覆在鋁箔中;烹調時間較長、溫度較高;使用器具為烤箱或炭火;若指肉類,最終目的是將食材烤至金黃、酥脆。
grill - 食材不拘;烹調時間較broil長;使用器具為烤箱或烤架,尤其是指放於鐵網上烤;熱源來自下方。
broil - 食材不拘;烹調時間很短;使用器具為烤箱,需先預熱;熱源來自上方,溫度極高,十分接近食材,以快速烤熟食物為目的,烤箱門通常打開來烤。
就算了解這些動詞的差別,中文不都是「烤」嗎?那麼譯者該如何處理呢?
我的想法是:若上下文已經點出「處理食材」、「烹調時間」、「使用器具」等區別這些動詞的面向,使讀者一看前後文就知道這道食譜要用哪一種方式烤,這個時候可以直接翻成「烤」就好,多加解釋反而累贅。
另外,可在「烤」字前面加上輔助字,描述烤的方式。例如:bake譯成「烘烤」、roast為「火烤」、grill為「燒烤」、broil為「炙烤」等。
如果以上兩種方式都不適用,且非得確實點明烤的方式、否則影響文意時,再多做解釋、區分差異。

チキンシーザーサラダ
1皿分
材料:
■パン生地用
セルフライジングフラワー 40g(海外では「Self-rising flour」として一般的に販売されています。日本では入手困難なため、小麦粉、ベーキングパウダー、塩で代用することができます)
薄力粉 打ち粉用に少々
粗塩 小さじ¼
ギリシャヨーグルト 大さじ3
オイルスプレー
■サラダ
鶏むね肉(皮と骨の付いていないもの)225g
粗塩 少々
コショウ 少々
エクストラバージンオリーブオイル 大さじ4(鶏肉を焼く大さじ1とドレッシング用大さじ3に分けて使用)
ウスターソース 小さじ½
レモン汁 大さじ1 ½
にんにくすりおろし 小さじ½
ディジョンマスタード 小さじ1 ½
粉チーズ(パルメザン) 大さじ1 +飾り用に少々
ギリシャヨーグルト 大さじ2
ロメインレタス 2カップ(150g)、一口大に刻んでおく
クルトン ½カップ(15g)
■その他用意するもの
20cmのステンレスボウル 2個
作り方:
1.オーブンを220度に予熱しておく。
2.パンでサラダボウルを作る:中くらいのボウルに、セルフライジングフラワー、塩、ギリシャヨーグルトを入れ、ゴムベラで混ぜ合わせる。なめらかなボール状になるまで、約5分間手でこねる。
3.作業台の上に薄く打ち粉をする。生地を台の上に出し、紙のように薄く、直径22.5cmくらいの円形の伸ばす。生地の形が崩れないように、時々回転させながら伸ばしていく。生地がくっつかないように必要に応じて、打ち粉を軽く足して良いが、粉を使いすぎないように注意する。
4.ドーム型の側面が上になるように、ステンレスボウルを裏返す。ボウルの外側にオイルスプレーをしっかり吹き付け、生地の片面にもオイルスプレーをする。オイルを塗った面を合わせるように、生地をゆっくりボウルの表面に添わせて、押し付ける。その際に、生地が折りたたまれても問題ない。もう1つのステンレスボウルの内側にオイルスプレーをして、それをボウルに添わせた生地の上にかぶせる。フチからはみ出た生地はペティナイフで切り取る。
5.ボウルを逆さまにしたまま、天板にのせて、オーブンで25分、あるいは生地が黄金色になるまで(上のボウルを外して確認する)焼く。オーブンから出したら、金網の上に置いて、15分以上冷ます。
6.ボウルが触れるくらい、十分に冷めたら、かぶせていたボウルを外す。ゆっくりと生地の付いたボウルをひっくり返し、生地を外す。金網の上で完全に冷ます。生地は冷めるにつれて、サクサクになる。
7.サラダを作る:鶏ムネ肉の表面に塩コショウをする。
8.中火にかけたフライパンに、オリーブオイルを大さじ1入れて熱する。鶏肉が深い黄金色になるまで、あるいは鶏肉の一番厚い部分が75℃になるまで、片面を約6分ずつ焼く。焼けたら鶏肉をフライパンからおろし、5分間休ませる。
9.中くらいのボウルに、ウスターソース、レモン汁、マスタード、粉チーズと塩を入れて混ぜ合わせる。残しておいたオリーブオイル大さじ3を、ゆっくりと、ムラなく注ぎ入れながら、乳化するまでよく混ぜ続ける。ヨーグルトを加え、なめらかになるまで混ぜる。お好みで、コショウを足す。
10.(8)の鶏肉を薄くスライスする。
11.(6)のパンでできたボウルの中に、ロメインレタスを入れ、(10)のスライスしたチキン、クルトンを乗せ、ドレッシングをかける。粉チーズをふりかけて完成!
Chicken Caesar Flatbread Bowl
for 1 serving
Ingredients:
■FLATBREAD
⅓ cup self-rising flour (40 g)
flour for dusting
¼ teaspoon kosher salt
3 tablespoons whole milk greek yogurt
nonstick cooking spray, for greasing
■SALAD
8 oz boneless, skinless chicken breast (225 g)
kosher salt, to taste
black pepper, to taste
¼ cup extra virgin olive oil (60 mL), divided
½ teaspoon worcestershire sauce
1 ½ tablespoons lemon juice
½ teaspoon garlic, minced
1 ½ teaspoons dijon mustard
1 tablespoon grated parmesan cheese, plus more for garnish
2 tablespoons whole milk greek yogurt
2 cups romaine lettuce (150 g), chopped
½ cup crouton (15 g)
■SPECIAL EQUIPMENT
2 metal bowls, 8 inches (20 cm)
Preparation
1.Preheat the oven to 425˚F (220˚C).
2.Make the flatbread bowl: In a medium bowl, stir together the flour, salt, and yogurt with a flexible spatula to combine. Knead the dough with your hands until a smooth ball forms, about 5 minutes.
3.Lightly dust a clean work surface with flour. Turn out the dough and roll out to a 9-inch (22.5 cm) round as thin as a sheet of paper. Rotate the round occasionally to help the dough hold its shape. Lightly dust with flour as needed to keep the dough from sticking, but be careful not to use too much flour, which will make the flatbread tough.
4.Invert an 8-inch (20 cm) metal bowl so the domed side faces up. Grease the bowl generously with nonstick spray, then spray one side of the dough. Gently lay the dough, greased-side down, over the bowl, pressing it flush against the surface. It’s fine if the dough folds over on itself in places. Grease the inside of the other bowl, then spray the exposed side of the dough. Press the second bowl over the dough. With a paring knife, trim any excess dough around the edges.
5.Transfer the bowls, still upside down, to a baking sheet and bake for 25 minutes, or until the dough is golden brown, lift the top bowl to check. Transfer to a wire rack and let cool for at least 15 minutes.
6.When the bowls are cool enough to handle, remove the top bowl. Gently invert the other bowl and let the flatbread bowl slide off. Let cool completely on the rack. It will continue to crisp as it cools.
7.Make the salad: Season the chicken breast on both sides with salt and pepper.
8.Heat 1 tablespoon of olive oil in a medium skillet over medium-high heat. Sear the chicken until deep golden brown, about 6 minutes per side, or until the thickest part of the chicken reaches 165°F (75˚C) on an instant-read thermometer. Remove the chicken from the pan and let rest for 5 minutes.
9.In a medium bowl, whisk together the Worcestershire sauce, lemon juice, garlic, mustard, Parmesan, and salt to taste. Drizzle in the remaining 3 tablespoons of olive oil in a slow, steady stream, whisking constantly to emulsify. Stir in the yogurt until smooth. Season with pepper to taste, if desired.
10.Once the chicken has rested, thinly slice.
11.Fill the flatbread bowl with the romaine, then top with the sliced chicken, croutons, dressing, and Parmesan cheese.
12.Enjoy!

NO BAKE Macaroni Gratin
Difficulty: Easy
Time: 20min
Number of servings: 2 (as a main dish)
Ingredients:
250g (8.8oz.) chicken breast *or shrimp/seafood mix if you like
200g (7oz.) potato
100g (3.5oz.) onion
100g (3.5oz.) macaroni *9min cooking time (or more minutes is ok, too)
300ml water
1 consomme cube (or bouillon cube) to make 300ml soup
200ml soy milk
2 tbsp. melted butter
2 tbsp. flour
1/2 tbsp. cooking oil
salt and pepper
50g (1.8oz.) pizza cheese
20g (0.7oz.) grated parmesan cheese
parsley flakes
Directions:
1. Toast the grated parmesan cheese in a frying pan until golden brown and set aside.
2. Remove the skin from the chicken if desired. Then cut into small bite-size pieces and season with salt and pepper. Slice the potato into 5mm (0.2 inch) half rounds. Slice the onion.
3. Heat cooking oil in a frying pan and stir-fry (2.) until coated with oil.
4. Add macaroni, water, and consomme cube, then cook on medium for 3 minutes.
5. Add soy milk, when it becomes to a boil, stop the heat. Mix melted butter and flour in a small dish. Add them into the frying pan. Then put on low and simmer until the sauce thickens.
6. Season with salt and pepper, sprinkle with pizza cheese, cover, and cook on low for about 5 minutes.
7. Taste the macaroni, when it is done, stop the heat, then sprinkle with the toasted parmesan cheese (1.) and parsley flakes to finish.
