[Three Cup Chicken 三杯鸡]
According to Wikipedia, three cup chicken (3 cup chicken) or sanbeiji 三杯鸡 originated from Jiangxi province of southern China but became especially popular in Taiwan. I guess that's why many people thought this is a Taiwanese dish - at least i did. The dish derives its name from the three cups of sauces required as ingredients. For each chicken, a cup each of soy sauce, rice wine (usually mijiu although it may be mixed with Shaoxing jiu), and sesame oil are added. However, ours have been modified to suit our taste buds.

I've requested Roland to use Sanbeiji method (simplified Chinese: 三杯鸡; or literally known as "three-cup chicken") to cook this dish. Instead of using chicken, I asked him to use my favourite variety of mushrooms instead. Three cup chicken originated from Jiangxi province and is a specialty of Ningdu. The dish is also commonly found in Taiwan.

Ingredients:
Serves 4 - 5 pax
3 slices of ginger
5 cloves of chopped garlic
140g of fresh button mushrooms
140g of fresh shitake mushrooms
140g of enoki mushrooms
1/4 cup of water
2 stalks of spring onion
A small handful of Thai basil leaves
3 tablespoons of premium dark soy sauce
3 tablespoons of Chinese cooking wine aka Shaoxing Huatiao wine
1/2 teaspoon of sugar
A few dashes of white pepper
2 tablespoons of sesame oil
1/2 teaspoon of salt

ㄧ鍋到底三杯雞,簡單無水三杯雞ㄧ次學會Three-Cup Chicken (Sanbeiji)
The chicken is tender and velvety, a little crisp at its edges, surrounded by coins of ginger and cloves of garlic. The sauce is dark and pungent — soy sauce cut through with aged rice wine , perfect for ladling onto rice. There is a sweetness in there as well, sugar and sesame against the salt of the soy. A handful or two of Thai basil added at the end imparts a floral punch.

I bulb of garlic
3 bulbs of shallots
A handful of sweet or Thai basil leaves
1 thumb size ginger
1/2 teaspoon sugar
Some white pepper to taste
