Personally this version is exotic fun to eat, because the Charsiu flavor resembles almost a hybrid between 風肉 & 臘肉. With a concentrated Porkiness, the Kowloon Sweet Soy Sauce is very local too. The Lard oil 豬油 here has a rounded moderate flavor.
Side note is I prefer Scrambled full Eggs or Yolk, 黃袍 style. Cooked Egg Whites tend to have a distinct protein taste & also picks up & exacerbates the underlying oil taste in traditional Chinese cooking, so pairs better with Seafood in my opinion! 😬

This Mini Spanish Breakfast is served up at Esquina for lunch and dinner, and is one of the must-haves IMO. Scrambled eggs & potato espuma on a bed of mushroom purée, topped with chorizo. #shutupandtakemymoney
Also, supermarkets need to sell potato foam in spray cans like they sell whipped cream. If you take that idea and run with it, just pay me royalty with a lifetime’s supply of potato espuma cans. 😏🙏
