繼《經典廚藝聖經》(Le Grand Cours de Cuisine)與《糕點聖經》(Pâtisserie)兩本鉅細靡遺、囊括現代烹飪與甜點技術的出版品後,Ferrandi 再度在這兩天推出兩本重量級書籍,一本《Chocolat》#巧克力全書、另一本《Le dictionnaire des chefs》(「#主廚辭典」,暫譯)則是法國美食文化寶典。
《Chocolat》在今天大手筆地 #同時推出英法文版,304 頁的內容 #分成技術與食譜兩大部分,前者從巧克力基礎知識開始,以 #超過200張步驟圖詳解包含調溫與製作奶餡、#麵糰、#夾心巧克力與裝飾的40個重要技巧;#食譜部分總計超過70個,包含巧克力棒、法式布丁塔、千層派、閃電泡芙、餅乾、布朗尼等,和《廚藝聖經》與《糕點聖經》採用類似設計,分成從簡單到進階、不可或缺等三種不同等級,讀者可以依照自己的需求選用。這本書目前 #Kindle電子書版本也已推出,有興趣的讀者甚至不需要等國際運送,現在就可以收藏。
《Le dictionnaire des chefs》則是我個人非常感興趣的一本書,由法國知名歷史學家、美食作家 Eric Glatre 與 Ferrandi 合作編纂,採辭典詞條的編列方式,由 A 到 Z 解釋法國美食文化的關鍵詞彙,包含物產品種、廚藝知識、廚房設備、工具等,收錄 #共約8000 個詞彙,包含 #1680個廚藝相關、#1240個甜點相關、1009個香料與調味料相關、1260個肉品相關、720個魚與海鮮相關、1480個水果與蔬菜相關、以及1000個酒與餐點搭配相關的詞彙。#厚達1512頁 的主廚辭典中並非只有文字說明,其中有超過2000張圖片與文字搭配,讓讀者對該詞彙能有更清晰直接的認識。這本書不僅值得廚藝界工作的職人們放在手邊隨時查找解惑,也適合對法國美食感興趣、希望能更深入瞭解法國飲食文化的讀者。本書目前還未在 Amazon 上架,但已經可以在 Fnac 與出版商 BPI 網站上購得。

After the huge success of “The Ferrandi Grand Cours de Cuisine” (Le Grand Cours de Cuisine) and the “French Pâtisserie” (Pâtisserie), Ferrandi Paris, School of Culinary Arts and Hotel Management, the renowned French culinary school has just launched two other important publications in October. “Chocolat” (English version: Chocolate) is a bible of chocolate making and “Le dictionnaire des chefs” (The FERNANDI Paris chef’s dictionary) an encyclopedia of French gastronomy.
“Chocolat” is published in both French and English versions today. The book contains 304 pages and is divided into two sections: skills and recipes. Starting from the fundamentals of chocolate, it illustrates 40 essential techniques with more than 200 step-by-step photos of making chocolate creams, doughs, bonbons, and decorations. More than 70 recipes such as chocolate bars, flan, millefeuille, eclair, cookies, brownie, etc. are included. They are classified into 3 levels from simple to sophisticated and indispensable so that the readers can choose according to their own needs. The Kindle version is also available so that those who’re interested (and impatient) don’t even need to wait for shipping.
“Le dictionnaire des chefs” is the one that I’m really interested in. In collaboration with Ferrandi, Eric Glatre, the famous French historian and author of French gastronomy, is in charge of the writing and editing of this encyclopedia encompassing more than 8000 entries in 1,512 pages. It covers 1,680 terms of cuisine, 1,240 of pâtisserie, 1,009 terms of spices and condiments, 1,260 of meat, 720 of fish and seafood, 1,480 of fruits and vegetables, and 1,000 terms of food and wine pairings. Serving as an incredibly rich resource to explore the wonderful world of French gastronomy, this book is a great companion for chefs, culinary school students as well as those who’re interested and passionate about the concerned subject and its related professions.

Kakiage is Japanese vegetable fritters, sometimes with seafood. Vegetable strips are the main ingredients. Leftover vegetables are okay! Vegan/Vegetarian people can use Kombu Dashi broth for the dipping sauce 👍
Using round aluminum foil molds, you can deep fry the vegetable strips with less batter coated. In this way Kakiage becomes very light and crispy 😋
You can serve it with rice or Udon noodles for example, as a side dish. Or, you can put on top of rice or Udon noodles to make a bowl dish. It is up to you 😉

Light and Crispy Kakiage Tempura (Japanese Vegetable Fritters Recipe)
Difficulty: Easy
Time: 15min
Number of servings: 4 pieces of 8cm (3inch) Kakiage
Ingredients
100g (3.5oz) onion slices
30g (1oz) carrot strips
30g (1oz) whole kernel corn
--Tempura Batter
* 1/2 cup ice-cold water
* 1/2 cup all purpose flour
--Tentsuyu (Tempura dipping sauce)
* 100ml Dashi broth (using packaged dashi powder saves time)
* 2 tbsp. Mirin (sweet Sake)
* 2 tbsp. soy sauce
vegetable oil for deep frying
Directions:
1. Cut aluminum foil about 30cm (12inch) long, fold it into quarters lengthwise. Make a ring then fold the ends together to make 8cm (3inch) circle. (please see the video)
2. Place the cut vegetables in a bowl. Add 1 tbsp. of all purpose flour from Tempura Batter, then coat evenly with your hands.
3. Tempura Batter: Mix ice-cold water and all purpose flour. Make sure to use ice-cold water not to activate the gluten. The batter should be lumpy, do not over-mix.
4. Add the vegetables then toss lightly.
5. Heat 5cm (2inches) of oil in a pan to 170C (340F). Place one or two aluminum foil rings (depending on the size of the pan), then put 1/4 of the vegetables in each ring little by little to form into circles. When the bottoms are cooked, remove the rings, flip them over and cook thoroughly until crisp golden. Then drain well. (Do not deep fry too many at once.)
6. Tentsuyu: In a pan, bring Dashi broth, Mirin, and soy sauce to a boil. You can also microwave until it comes to a boil. **
7. You can eat with salt, with Tentsuyu, or serve on top of rice with Tentsuyu to make Tendon (Tempura rice bowl), etc... it is up to you.
**For tentsuyu, you can use Yamasa's Konbu Tsuyu (3 times concentrated Konbu kelp seaweed soup stock). You just need to dilute it with hot water as directed on the package. This product is very convenient and it is available overseas!

Although Japan is not currently on any sort of lockdown or strict order to stay indoors, I think we are all starting to realize that we need to take matters into our own hands and self-isolate as much as possible. For those of you who are dealing with your first "crisis" in Japan, I wanted to provide a little bit of a guide to help you make sure you're as prepared as you can be, for spending time indoors.

●Curry
- Meats: Pork, Beef, or Chicken. Whatever you have.
- Vegetables: Potato, Onion, Carrot, Mushrooms, Spinach/Komatsuna/Kale, Asparagus, Sweet Potato, Pumpkin (Kabocha), Eggplant, Okura, Renkon (Lotus Root)

●Instant Miso (for reference, this is the kind I usually buy https://www.amanofd.jp/amano/shop/goods/index.html?ggcd=B4741&cid=miso)
You can buy any kind, some instant miso comes with a paste, which some people may prefer but I like the freeze-dried type. It is said that certain nutrients are preserved when you freeze-dry vegetables, so I think they're a bit healthier.
●Cook Do (for reference: https://www.ajinomoto.co.jp/cookdo/lineup/)
These are usually found in the Chinese seasoning section of your Japanese supermarket (as the majority of the boxes are Chinese.) Similar simple-meal kits with Japanese recipes are sometimes stocked in the same aisle.
●Canned Tomatoes
- Good for curries (add one can of diced tomatoes to your curry to make it more tangy and acidic)
- Pasta (sautee veggies, garlic, onion, and bacon, add your diced tomatoes, stew, taste, and season, add to pasta)
- Soups (lightly sautee your favorite soup veggies in oil and garlic, pour diced tomatoes into the pot, then fill the empty tomato can with water and add one cube of soup stock of your choice, throw in your desired seasonings, bring to a boil and simmer. you can add rice, quinoa, gains, shredded chicken to make it a hearty meal.)
- Stews (for beef, lamb, and pork, I cut my vegetables large, season them first with cumin, curry spice, cinnamon, salt, pepper, paprika, etc to make a fragrant mix, then add tomatoes and water, and simmer until liquid has dissolved and the mixture is thick enough to be a stew.)
- Salsa (Use half a can, pulse in a mixer with red onion, cilantro, garlic, green pepper, red chiles, lemon, salt, pepper, and a bit of cumin for a more tex-mex flavor)

Most supermarkets have them, and they are very versatile, cheap, and easy to use.
●Yakiniku Sauce:
You can choose any kind you like! When in doubt, the popular Yakiniku chain "Gyukaku" has a sauce in the supermarket that's pretty good. Use this on "grilled" and "charred" meats. Tastes great over rice. Make a "Yakiniku Bowl" with charred carrots, cabbage, onion, green pepper, and slices of beef or pork.
●Ponzu: I prefer Yuzu, but you won't be missing out on too much if they don't stock it. Regular Ponzu works. Use this on steamed veggies with lighter flavors, or in sautees with Asian veggies (bok choy with garlic topped with ponzu, baked white fish with salt and ponzu, or daikon and pork sauteed with ponzu is great!) Can be mixed with olive oil, salt, and pepper to make a salad dressing too!
●Veggies - Try to pick a few greens, and then one veggie of each color. I try to plan for one raw-green (for salads), one wilting-green (for soups and stir-fries), and one firm-green (for baking grilling) per shop.
Green: Lettuce, Baby Leaf, Spinach, Bok Choy, Komatsuna, Asparagus, Zucchini, Green Pepper, Kale, Cucumber, Cabbage, Avocado
Purple: Red Onion, Eggplant, Purple Turnip, Satsumaimo (Sweet Potato), Purple Cabbage (great for adding color).
Red: Tomatoes, Red Peppers, Beets, Beni Daikon (Red Radish)
Orange: Carrot, Pumpkin, Orange Pepper, Orange/Yellow Fruit Tomatoes
White: Daikon, Turnip, Cauliflower, Renkon (Lotus Root), Bean Sprouts, Potato, Onion, Sato-Imo, Yama-Imo,
Brown: Gobo (burdock root), Mushroom
●Buy & Freeze:
- A loaf of bread or two (Japanese bread tends to come in slices instead of loaves so buy accordingly.)
- Meats (Chicken Breasts are the most versatile AND cost-effective IMO.)
- Frozen Seafood (S&B has a paella seasoning! if you can find it, this is a nice way to utilize rice, veggies, and seafood)
- Frozen naughty snacks like pizza, dorayaki, frozen fried rice, emergency instant meals, etc can go here too.
●Pasta and Rice are good to have, but if you don't have a rice cooker in your apartment, you can buy a few microwavable instant-packs from your supermarket or convenience store and store those instead.

How to make Jjapaguri (Ram-don) in 1 minute!
I followed the official recipe from the noodle company Nongshim.
Since I saw the news that Parasite won Best picture at the Oscars, I have had a craving for Jjapaguri (Ram-don). Jjapaguri is made with two types of Korean instant noodles, Chapagetti + Neoguri. Both noodles have been around for years, steady best sellers in Korea. Chapagetti is an instant noodles mixed with black bean sauce which has a sweet and salty taste. Neoguri is noodle soup with spicy seafood taste.
At the movie, they mixed it with small pieces of steak.
