BACK TO THE FUTURE OF SKYSCRAPER DESIGN
Answers to the problem of excessive electricity use by skyscrapers and large public buildings can be found in ingenious but forgotten architectural designs of the 19th and early-20th centuries
A. The Recovery of Natural Environments in Architecture by Professor Alan Short is the culmination of 30 years of research and award-winning green building design by Short and colleagues in Architecture, Engineering, Applied Maths and Earth Sciences at the University of Cambridge.
'The crisis in building design is already here,' said Short. 'Policy makers think you can solve energy and building problems with gadgets. You can't. As global temperatures continue to rise, we are going to continue to squander more and more energy on keeping our buildings mechanically cool until we have run out of capacity.'
B. Short is calling for a sweeping reinvention of how skyscrapers and major public buildings are designed - to end the reliance on sealed buildings which exist solely via the 'life support' system of vast air conditioning units.
Instead, he shows it is entirely possible to accommodate natural ventilation and cooling in large buildings by looking into the past, before the widespread introduction of air conditioning systems, which were 'relentlessly and aggressively marketed' by their inventors.
C. Short points out that to make most contemporary buildings habitable, they have to be sealed and air conditioned. The energy use and carbon emissions this generates is spectacular and largely unnecessary. Buildings in the West account for 40-50% of electricity usage, generating substantial carbon emissions, and the rest of the world is catching up at a frightening rate. Short regards glass, steel and air-conditioned skyscrapers as symbols of status, rather than practical ways of meeting our requirements.
D. Short's book highlights a developing and sophisticated art and science of ventilating buildings through the 19th and earlier-20th centuries, including the design of ingeniously ventilated hospitals. Of particular interest were those built to the designs of John Shaw Billings, including the first Johns Hopkins Hospital in the US city of Baltimore (1873-1889).
'We spent three years digitally modelling Billings' final designs,' says Short. 'We put pathogens• in the airstreams, modelled for someone with tuberculosis (TB) coughing in the wards and we found the ventilation systems in the room would have kept other patients safe from harm.
E. 'We discovered that 19th-century hospital wards could generate up to 24 air changes an hour-that's similar to the performance of a modern-day, computer-controlled operating theatre. We believe you could build wards based on these principles now.
Single rooms are not appropriate for all patients. Communal wards appropriate for certain patients - older people with dementia, for example - would work just as well in today's hospitals, at a fraction of the energy cost.'
Professor Short contends the mindset and skill-sets behind these designs have been completely lost, lamenting the disappearance of expertly designed theatres, opera houses, and other buildings where up to half the volume of the building was given over to ensuring everyone got fresh air.
F. Much of the ingenuity present in 19th-century hospital and building design was driven by a panicked public clamouring for buildings that could protect against what was thought to be the lethal threat of miasmas - toxic air that spread disease. Miasmas were feared as the principal agents of disease and epidemics for centuries, and were used to explain the spread of infection from the Middle Ages right through to the cholera outbreaks in London and Paris during the 1850s. Foul air, rather than germs, was believed to be the main driver of 'hospital fever', leading to disease and frequent death. The prosperous steered clear of hospitals.
While miasma theory has been long since disproved, Short has for the last 30 years advocated a return to some of the building design principles produced in its wake.
G. Today, huge amounts of a building's space and construction cost are given over to air conditioning. 'But I have designed and built a series of buildings over the past three decades which have tried to reinvent some of these ideas and then measure what happens. 'To go forward into our new low-energy, low-carbon future, we would be well advised to look back at design before our high-energy, high-carbon present appeared. What is surprising is what a rich legacy we have abandoned.'
H. Successful examples of Short's approach include the Queen's Building at De Montfort University in Leicester. Containing as many as 2,000 staff and students, the entire building is naturally ventilated, passively cooled and naturally lit, including the two largest auditoria, each seating more than 150 people. The award-winning building uses a fraction of the electricity of comparable buildings in the UK.
Short contends that glass skyscrapers in London and around the world will become a liability over the next 20 or 30 years if climate modelling predictions and energy price rises come to pass as expected.
I. He is convinced that sufficiently cooled skyscrapers using the natural environment can be produced in almost any climate. He and his team have worked on hybrid buildings in the harsh climates of Beijing and Chicago - built with natural ventilation assisted by back-up air conditioning - which, surprisingly perhaps, can be switched off more than half the time on milder days and during the spring and autumn.
“My book is a recipe book which looks at the past, how we got to where we are now, and how we might reimagine the cities, offices and homes of the future. There are compelling reasons to do this. The Department of Health says new hospitals should be naturally ventilated, but they are not. Maybe it’s time we changed our outlook.”

Thai Steak by Jimmy's Table
One of my favorite ways to marinade and grill a steak! It’s got that delicious sweet and savory caramelized taste. It also has lots of powerful flavors from not only the fish sauce, but also the garlic, basil, cilantro, chilies, lime and deep fried shallots/garlic. Enjoy!
Ingredients (食材):
Marinade ingredients:
1 cup sugar (糖) melted to caramel (焦糖)
1 cup of hot water (熱水)
1/2 cup sugar (糖)
3-6 tablespoons fish sauce (魚露)
3 tablespoons of minced garlic (大蒜)
1-2 Spicy Red Chilis (小辣椒) - sliced and used if you want it spicy
2 Limes (青檸檬) - halved and squeezed for juice, seeds removed
1 tablespoon of garlic powder (大蒜粉)
1 tablespoon of ground black pepper (黑胡椒)
Main ingredient:
Beef Short Ribs (牛小排) (Above marinade can be used to make 5-8 steaks. Also you can substitute beef with pork neck! 上面的醬料可以用來醃5-8塊牛排
Cooking oil
Sauce ingredients:
1/2 cup of cilantro (香菜) - chopped, leaves only
1/2 cup of Thai basil (九层塔) - chopped, leaves only
2 Large “non-spicy” red chili - (大紅辣椒-非辣), cut diagonally
1-3 Spicy Red Chilis (小辣椒) - sliced and used if you want it spicy
1 tablespoon of minced garlic (大蒜)
Finishing Ingredients:
1/4 cup deep fried shallots (炸小葱头)
1/4 cup deep fried garlic (炸大蒜)
Step 1
Make caramel by adding 1 cup of sugar into a pot. Heat up the sugar until it melts, but keep an eye out on it. You can always lower the heat so it doesn’t overcook or burn. When the caramel fully melts and starts to brown and bubble up, turn off the heat. Carefully and slowly, add and stir in 1 cup of “hot” water. This part can be quite explosive so be careful not to burn yourself.

Cut in 1-2 spicy red chilies. Squeeze in 2 limes and taste to see if the sauce is ok. I added 2 more tablespoons of fish sauce as it wasn’t salty and flavorful enough. Add in 1 tablespoon of garlic powder and 1 tablespoon of fresh ground black pepper.

Step 3
Marinate the beef short ribs with the caramel fish sauce and store in the fridge for at least half an hour to an hour. Best result is to marinade a few hours or overnight sealed in a ziplock bag.

Step 4
Use the remaining caramel fish sauce marinade to make the sauce to pour onto the finished steak. Stir all ingredients to make the finishing sauce.

Remove the steaks from the fridge and try to remove small pieces of garlic or red chilies so that they don’t burn when you are pan frying the steaks. Pat the steaks dry so they are also not too wet from the sauce. Also remember to let the steaks rest outside, so they get to near room temperature. A cold steak on a hot pan will only result in an undercooked and raw steak inside.

Add in 1-2 tablespoons oil into a frying pan and heat up until it is very hot. You should see a little white smoke rising from the pan.

Add in the steak to sear on one side until brown, then flip the steak. Add in some of the marinating sauce onto the steak to add to the flavor and help create a brown crust (caramelization) to the steak.

Step 9
When ready, remove the steak from pan and place onto a plate to rest the steak. A steak needs to rest for 10 minutes so that the juices get reabsorbed back into the meat. If immediately cut into the steak, the juices will steam and evaporate away leaving the steak tougher.

Step 10
I like to plate this dish by using a nice wood cutting board. Slice the steak diagonally on the board and be sure to cut across the meat grain, so it is more tender when eating it. Spoon on the caramel fish sauce with cilantro, basil and chilies. Sprinkle on deep fried minced garlic and and deep fried shallots, and you are ready to eat!

我喜歡直接用木頭盤子當作擺盤,將牛排直接斜切在木板上,並沿著肉的紋理切,吃起來的肉質會更軟嫩。接著再淋上前面製作好的九層塔香菜牛排醬汁,最後撒上一些炸大蒜碎及紅蔥頭就完成摟!

イエローポップコーン (穀粒) 55g
燻製パプリカパウダー 小さじ2
チリパウダー 小さじ½
ガーリックパウダー 小さじ1
オニオンパウダー 小さじ1
粗塩 小さじ1
ブラウンシュガー 大さじ2
オリーブオイル 大さじ3
作り方:
1.大きな鍋にココナッツオイルを入れ、中火で溶かす。ポップコーン3~4個を加え、蓋をする。ポップコーンが弾けたら、一旦鍋から取り出し、残りのコーンを加えて蓋をし、ポップコーンが弾け始めるまで10秒おきに振る。ポップコーンがほとんど弾け、弾ける間隔が3秒以上あいたら、火を止めて15秒ほど置いて、最後のポップコーンが弾け終わるのを待つ。
2.小さなボウルにパプリカパウダー、チリパウダー、ガーリックパウダー、オニオンパウダー、塩を入れて混ぜる。脇に置いておく。
3.別の小さなボウルにブラウンシュガーとオリーブオイルを入れて混ぜる。
4.ポップコーンに、(3)を注ぎ、均一にコーティングするように混ぜる。
5.さらに(2)を振りかけ、均一にコーティングするようにかき混ぜる。
6.ボウルに移したら、完成!
※天板に広げて完全に冷ましてから密閉容器に入れて2日ほど保存できる
BBQ Popcorn
Ingredients
for 4 servings
2 teaspoons smoked paprika
½ teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon kosher salt
2 tablespoons brown sugar
3 tablespoons olive oil
1 ½ tablespoons coconut oil
⅓ cup yellow popcorn kernels(55 g)
Preparation
1.In a small bowl, mix together the paprika, chili powder, garlic powder, onion powder, and salt. Set aside.
2.In a separate small bowl, mix together the brown sugar and olive oil. Set aside.
3.Melt the coconut oil in a large pot over medium heat. Add 3-4 popcorn kernels and cover with the lid. Once they pop, add the rest of the kernels and cover, shaking every 10 seconds, until they begin pop. Once the pops are more than 3 seconds apart, turn off the heat and let sit for 15 seconds to allow any final kernels to pop.
4.Uncover and drizzle the brown sugar mixture over the popcorn. Carefully toss to coat.
5.Sprinkle the spice mixture over the popcorn and stir to coat evenly.
6.Transfer to a bowl and eat immediately, or spread in a single layer on a baking sheet and let cool completely before storing in a sealed container for up to 2 days.
7.Enjoy!

材料:
食パン (サンドイッチ用) 8枚
チェダーチーズ (スライス) 2枚
スイスチーズ (スライス) 2枚
ハム (スライス) 4枚
卵液 適量
バター 大さじ4
トマトスープ (盛り付け用)
作り方:
1.まな板の上で、パンの耳を切り落とす。手や麺棒でパンを平らに押す。
2.チェダーチーズを1枚、4等分に切る。スイスチーズも同様にする。
3.ハムも四角にカットする。
4.平らにした食パンを1枚置き、その上にカットしたチェダーチーズを2枚重ねるように置く。チェダーチーズの上にハムをのせ、その上にカットしたスイスチーズを2枚重ねる。
5.食パンの縁に卵液を塗る。
6.もう1枚の平らにしたパンを上にのせ、縁を押さえる。フォークを使って、ラビオリの縁に沿って、密閉されるまで押す。
7.フライパンにバター大さじ1を入れ、中火で溶けるまで熱する。フライパンにラビオリを入れる。焼き色が付き、カリッとした食感になるまで、片面3分ほど
焼く。火からおろす。
8.温かいトマトスープと一緒に盛り付けたら、完成!
Grilled Cheese “Ravioli”
Servings: 4
INGREDIENTS
8 slices sandwich bread
2 slices cheddar cheese
2 slices Swiss cheese
4 slices ham
Egg wash
½ cup butter
Tomato soup, for serving
PREPARATION
1. On a cutting board, cut the crusts off of the bread. Press bread flat with hands or a rolling pin.
2. Take one slice of cheddar cheese and cut it into 4 equal squares.
3. Repeat with the Swiss cheese.
4. Cut the slices of ham into a square.
5. Place one piece of flattened bread on a surface. Place 2 squares of cheddar so they are overlapping. Place the ham on top of the cheddar. 6. Place 2 squares of the Swiss on top of the ham so the are overlapping.
7. Brush the edges of the bread with egg wash.
8. Take the other flattened piece of bread and place it on top. Press down the edges. Using a fork press along the edges of the “ravioli” until the edges are sealed.
9. In a pan heat 1 tablespoon of butter until melted on medium heat. Place the “ravioli” in the pan. Cook for about 3 minutes on each side until golden and crispy. Remove from heat.
10. Serve immediately with hot tomato soup.
11. Enjoy!
