✅ Secrets for crunchy cucumber kimchi:
1. choose small and firm instead of big and soft
2. cut off blossom ends of a cucumber
3. pour over salty "boiling water" for soaking
4. drain the water out properly
✅ YOU WILL NEED:
4 cucumbers
1/2 small onion
1/5 carrot
20g chive
4 tablespoons Korean chili powder (고추가루 guchu garu)
2 tablespoons of fish sauce (멸치액젓 myulchi aekjeot )
2 teaspoons minced garlic
1 teaspoon ginger
1.5 tablespoons green plum syrup (매실청 Maesil chung)
*if not available, use '2 tablespoons of grated apple + 1 teaspoon sugar',
or just '2 teaspoons of sugar' instead
1/2 tablespoon sugar
1 tablespoon roasted sesame seed

食譜中沒有食鹽、沒有醬油, 但鹹、甜、酸的好滋味, 一邊吃一邊說好吃。
一大盤的酸香排骨, 不到片刻, 全部吃光光。
食材 Ingredients
排骨一斤半 900g Ribs
料酒三湯匙 3sp Cooking Wine
胡椒粉少許 Some White Pepper Powder
薑一塊 50-75g Ginger
蔥白一把 Spring Onion
(沒看錯, 也沒漏, 這食譜不需放食鹽。也沒有醬油。
醋 在食用時, 味蕾會有誤認為是鹹的假鹹味。)
五印醋一量米杯 200ml (烏醋) Black Vinegar
料酒半個量米杯 100ml Cooking Wine
冰糖三湯匙 3sp Crystal Sugar
裝飾 For Garnishing
芫荽一小把 Coriander
白芝麻 (炒過的熟芝麻) 少許 Some Toasted White Sesame Seed

鸡蛋两颗,高汤比例 1:2.5 我用的是鸡高汤, 加入配料香菇,胡萝卜和虾(简单腌制过),再加入酱油和味淋
照烧三文鱼
三文鱼放盐和黑胡椒(少许)表面擦面粉
照烧酱可以买做好的,也可以自己调:2匙酱油,1匙味淋,1匙清酒,2匙糖 (可以加入1-2匙高汤,自选)
Miso汤
脱水海带,你喜欢的Miso,柴鱼高汤Dashi (我只是用了泡香菇的水而已)嫩豆腐
