Toh Ah Wat is 65 and runs a drinks stall at Ang Mo Kio market. He lives in a four-room flat in Yishun with two of his four children, and his wife. He takes only three days off a month. But his hard work earns him enough to be generous – any one who can’t afford a meal in the area gets a free breakfast from him – a hot drink and kaya and butter toast.
Each morning, I wake up at just before 4am, at the darkest hour. After 30 years, I don’t need light and I don’t need an alarm. Before 4.20, I am out of the flat. I need to be quick because there are people waiting by 5 am. I drive my old Mitshubishi to Ang Mo Kio. I don’t think I actually speed, but get to my stall no later than 4.40 am.
Then it’s like a race against time – boil the water, wipe down the counters, boil the cups. Heat, water, powder, milk, lights. In that order.
I need the water to be a rolling boil, and then when it’s steaming hot, it goes into the powder. This gives the best fragrance.
People tell me the ang mohs, they don’t actually boil the water until it’s 100 degrees, if it’s too hot, something happens to their coffee and it tastes funny. I’ve tried it, but it tastes funny anyway, even if they did it at the “correct temperature”. But our coffee is different you know – we have a different colour, a different flavour, composition and the powder reacts differently.
I have been roasting beans since I was 10. I don’t know chemistry but I know what I am talking about. Our coffee needs the water hot but you need to know when you take stop boiling it – just that little bit over and it’s sour.
I never did well at school, never wanted to stay in school beyond primary four. But I have a nose for coffee and for making tea. Well, tea is the hard one but I can’t tell you my secret. No matter how fast I need to make it, no matter how many people give me their orders, I carry it in my head, I don’t get it wrong.
From 5 am to 7 am, I hardly stop – people going to work, and they need breakfast fast and nourishing. I sell a basic set for $2.20 – two eggs, soft or hard boiled, kaya and of course tea or coffee. This is much cheaper than anywhere else – less than half the price you pay for those in air-con places. It’s nothing fancy but I make sure the coffee and tea are better than the usual. Each day, I sell between 70 to 100 breakfasts.
Then, from 8 am onwards, those who need a free meal come around. It’s nothing organised, just from the neighbourhood. They here, sit down, and I give them breakfast. I started doing this many years ago – because you know, as hawkers we know who are the poor people around us. When they pay, they will take the money out reluctantly, and even a $2 note is folded carefully. Some of us will say, “It’s ok, don’t have to pay.”
But actually, people have their pride. They don’t want to come to us and try for a free meal, and they are afraid because they don’t know which one can afford to give them a meal.
So, last October, I made it more formal. I went to the community centre and told them – look you must be helping lots of people. Anyone who needs a meal you tell them to come to me, and I will give them free breakfast. Just don’t come during peak hours if they can help it.
I told my wife: “We am not serving anything expensive, a few meals, surely we can treat people.” She agreed. She takes the afternoon shift – I get off at 4 pm and she takes over.
So the CC people, they made a simple printout with a picture of the breakfast and gave them to people who need a free meal. Each month, I give out about 50 free breakfasts. I didn’t set a limit for the CC, but this is the number that come to me, on the average.
I used to give eggs automatically, but some of them don’t eat it so it’s wasted – they are old and many have high cholesterol and they explain they cannot eat the eggs. So I only give when they ask for it now.
My wife says some people come in the afternoons for “breakfast” too, but it’s ok, whenever they are hungry, we will feed them. I am hoping that it will catch on among the other hawkers too, but so far, I don’t think anyone else has done it yet. But it doesn’t matter. I keep doing it and someday, others will do the same too, if they can afford it.
I usually try and sneak a lunch in at 12 noon – I eat from all my neighbours stalls, it's a big market but over the years, I’ve tried everything. My favourite now is the fish soup stall.
We all eat from one another – all pay market price but we give each other more ingredients or a special cut of meat. I usually eat within 15 minutes because the lunch crowd comes out right after 12. I have four helpers – two in the morning, and two in the afternoon – all my relatives, or my wife’s family.
After lunch, it’s breakneck speed until 3 pm. Then I can sit down and talk to my friends, drink sugar cane juice, and finally talk to the customers. After a break, I drive home, take two to three hours’ nap and drive back about 9pm. to close up.
I do all the heavy lifting – getting the beer and drinks out from the store to the stall, clear the bottles, do the clean up and close the accounts.
I fetch my wife home, have a simple meal, and we are usually in bed by 11 pm after a bit of TV. We’ve done this together for decades so we have a routine like clockwork. Except for our off days – when we can do whatever we like. We take two full off days a month, and two half days. All of them are spent with our six grand kids – two of my four kids are married.
I don’t bring them any where expensive, or buy them anything, but we have a good time, just driving around Singapore, have meals at zi char stalls, and you know, just giving them a break from their parents! When they see me, it’s like a holiday for them – “Gong gong is here!” and they go wild.The oldest is in secondary school, and the youngest are in primary school.
When they were younger, my kids always offer to help me out at the stall but I forbade them to do so. It’s a hard life and I wanted them to do well, have a better life. Now all of them have good steady jobs, which is the best reward for me.

Thank you Knorr for making the filming of this video possible! Yay! We love our Nasi Lemak with Salted Egg Yolk Fried Chicken - it's such a lovely twist from the usual same old same old boring fried chicken. I think you will like it.
We know most people only add coconut milk, salt and pandan leaves to make coconut rice but Roland added lemongrass to the rice which really made the rice even more fragrant. You really got to try it. Super yummy!
His chilli for this nasi lemak was also almost perfect for us but don't take my word for it - try it and let me know what you think.
Last but not least, what's nasi lemak if we don't have eggs and anchovies. Whether you're a fan of sunny side or hard-boiled egg - make it your own way to suit your preference. Also, do make sure your anchovies are super crispy when you serve them.

Salted Egg Fried Chicken Wings

(A) Marinated Chicken

6 X chicken wings
1 teaspoon of salt
2 tablespoons of light soy sauce
A few dashes of white pepper
Some cornflour (to coat marinated wings)
(B) Salted Egg Sauce
-----
Some cooking oil
40g of unsalted butter
5 cloves of chopped garlic
3 pieces of bird's eye chilli (optional)
A small handful of curry leaves
3 tablespoons of Knorr Salted Egg Powder
1 teaspoon of salt
1 teaspoon of sugar
----------------------------
Nasi Lemak (Coconut Rice)
==============
320g of Thai jasmine rice
300ml of water
220ml of coconut milk
1/2 teaspoon of salt
1 stalk of lemongrass (use only the white stem)
5 - 6 pieces of pandan leaves
----------------------------
Nasi Lemak Sambal Chilli
==============
Ingredients (A) - blend into a fine paste
----
25 pieces of dried chilli - rehydrated
1 stalk of lemongrass (use only the white stem)
1 whole red onion
8 pieces of shallots
4 cloves of garlic
20g of dried shrimps - rehydrated
10g of dried anchovies (dried fried to crispy)
Some cooking oil
Ingredients (B)
----
1/2 cup (125ml) of oil
20g of belacan - dry roasted
1 teaspoon of tamarind paste
40g of palm sugar (can use white or brown sugar)
2/3 cup (170ml) of dried shrimp soaking liquid

100g of dried anchovies

Necessary Equipment:
Tamagoyaki Nabe (rectangular omelet pan)
Ingredients:
2 eggs
50g (1.8oz.) granulated sugar
50ml fresh cream or whipping cream *milk is okay
2 tbsp. melted butter *cooking oil is okay
100g (3.5oz) cake flour
1 tsp. baking powder
a few drops of vanilla extract
cooking oil
Directions:
1. Make a core tube by rolling aluminum foil. Make sure it is as wide as the pan.
2. Beat eggs in a bowl. Add sugar and mix well. Then add fresh cream and melted butter, and mix well.
3. Sift in cake flour and baking powder, and mix well. Add a few drops of vanilla extract and mix well.
4. Heat cooking oil in a Tamagoyaki Nabe (rectangular omelet pan) on low heat, pour (1/2 ladle of) the batter in the pan and spread over the surface. When bubbles appear on the surface, place the core tube coated with some oil, and start rolling (just like making Tamagoyaki). Once it has browned, set aside.
5. Again, on low heat, spread the batter over the surface of the pan. When bubbles appear on the surface, place the rolled cake, roll, and set aside. Repeat this (for 5 or 6 times) until all your batter is gone.
You can either serve immediately or chill in the fridge before serving! It will slightly get hard in the fridge, so leave at room temperature for a few minutes before you serve.
You can coat it with icing sugar, serve with whipped cream or ice cream if desired.

Moist and fluffy cupcakes with custard whipped cream filling.
I received a lot of requests for Hokkaido Chiffon Cupcakes (北海道牛奶蛋糕). However it is NOT a Japanese sweet. LOL
I don't know why it is named Hokkaido (sounds like a Japanese sweet)! haha
Anyhow, I asked my viewers and they showed me the pictures and the websites, then I finally got an idea that these are chiffon cupcakes with custard whipped cream filling.
Based on that info, I created this recipe. Sorry if this is not what you want... BUT my opinion is... AMAZINGLY DELICIOUS XD My darling said I can sell these cupcakes. LOL Well... I think I'm gonna make this again!!!

How to Make Hokkaido Chiffon Cupcakes with Vanilla Custard Whipped Cream
Difficulty: Unexpectedly Easy
Time: 2-3hrs (incl. cooling time)
Number of servings:
8-10 (5cm/2inch) muffin cups
12-14 (5cm/2inch) cupcake cups
Necessary Equipment:
electric mixer
Ingredients:
((Egg Yolk Batter))
3 egg yolks
20g (0.7oz.) granulated sugar
40ml cooking oil
40ml milk
60g (2.1oz.) cake flour
((Meringue))
3 egg whites
40g (1.4oz.) granulated sugar
((Vanilla Custard Cream))
1 tbsp. cake flour
1 tbsp. corn starch
40g (1.4oz.) granulated sugar
200ml milk
2 egg yolks
15g (0.5oz.) butter
a few drops of vanilla extract
((Whipped Cream))
100ml heavy whipping cream (fresh cream) *chilled
1 tbsp. granulated sugar
((Finish))
powdered sugar (confectioner's sugar)
Directions:
((Preparation))
Separate the eggs and place the whites in a large bowl. Let your egg whites sit in the refrigerator to keep them cold until you are ready to use them (which makes them easier to whip).
((Egg Yolk Batter))
In a bowl, place egg yolks and sugar. Beat them with an electric mixer until white like mayonnaise. Add cooking oil and milk, then mix well with an electric mixer. Sift in cake flour and mix well with a whisk.
((Meringue))
In a large bowl, whip egg whites and half of the granulated sugar with an electric mixer until soft peaks form. Then add the rest of the granulated sugar and whip them until firm peaks form. *If it's thick enough, you can turn the bowl upside down without it sliding out.
((Combine and Bake))
Add 1/3 Meringue into the Egg Yolk Batter and blend well with a whisk. Then add the rest of the Meringue 1/2 at a time and mix well with a spatula. Preheat the oven to 170C (338F). Spoon the mixture into the cups up to 70% full. Bake muffin cups for 20-25 minutes. Bake cupcake cups for 15-20 minutes. When they are done, place them on a wire rack and leave to cool.
((Vanilla Custard Cream))
Place flour, corn starch, and granulated sugar in a bowl, then mix well with a whisk. Add a bit of milk and mix well. Then add the rest and mix well again. Add egg yolks and mix well. Strain the mixture with a strainer and transfer to a saucepan. Add butter, put on low, stir constantly, and stop the heat when the cream starts to thicken. Mix well with the remaining heat. Add a few drops of vanilla extract to finish. Leave to cool or put in the fridge to cool completely.
((Whipped Cream))
Combine fresh cream and granulated in a dry, clean bowl. Float the bottom of the bowl in ice water, whisk the cream until it forms a stiff peak.
((Finish))
Add the Whipped Cream into the Vanilla Custard Cream 1/3 at a time and mix well with a whisk. Fit a pastry bag with a small round tip, and fill with the cream. Pipe the cream into the chiffon cupcakes and dust with powdered sugar.
You can either serve immediately or chill in the fridge before serving!
