認識地中海貧血
地中海貧血是一種遺傳性血液疾病,由於基因缺損令患者無法產生足夠的正常血色素,造成不同程度的貧血。重型地中海貧血患者需要長期輸血;中型地中海貧血患者脾臟腫大,有可能要切除或服食除鐵藥物。而部份輕型地中海貧血患者終身沒有症狀,部份患者則可能因為貧血而導致容易疲勞。
從中醫角度看,雖然地貧基因不能逆轉,但可針對症狀對症下藥。貧血屬於血虛範疇,一般以補養氣血及調理脾腎為主,如果有容易頭暈、心悸、面色偏白、嘴唇色淡、皮膚乾燥等血虛症狀,適量飲用補氣養血的湯水有助改善情況,如情況嚴重或持續,宜諮詢註冊中醫師治理。
食材小貼士:
紅豆性平,能補血和胃,紓緩集中力不夠、氣血虛弱等症狀。適合各類體質人士服用。
南瓜紅豆腰果素湯
功效:養血強身,紓緩心悸、頭暈、睡眠差等症狀。
材料:南瓜半個(約800克)、紅蘿蔔2根、紅豆30克、腰果30克、花生30克、紅棗4枚
做法:
1. 把所有材料洗淨,木瓜及南瓜去皮去籽切塊,腰果先以白鍋炒香備用。
2. 鍋中加入約2500毫升水,放入全部材料,以武火煮至水滾,調文火煮約2小時,加鹽調味即成。
備註:體質偏熱人士不宜經常飲用。

What is Thalassemia?
Thalassemia is an inherited blood disorder, and its patients are unable to produce sufficient hemoglobin for the body, causing them to suffer from various degrees of anemia.
Patients with thalassemia major have to go for blood transfusion regularly; those with thalassemia intermedia might have a swollen spleen. If need be, they might have to remove the spleen and take Deferasirox (an iron chelator used to treat chronic iron overload); thalassemia minor sufferers might not exhibit any symptoms, but they would feel exhausted easily due to anemia.
From the perspective of Chinese Medicine, though this genetic disorder is irreversible, there are ways to relieve the symptoms. Anemia is a type of blood deficiency, so the plan should focus on nourishing the qi and the blood and regulating the spleen and kidneys.
Individuals with blood deficiency-related symptoms such as dizziness and palpitation, pale face and lips, and dry skin should drink soups that can replenish the qi and nourish the blood. If the condition persists, consult registered and licensed Chinese physicians.
Tips on ingredient:
Red beans are mild in nature and can replenish blood and stomach. Relieves symptoms of lack of concentration, asthenic qi and blood. Suitable for all body types.
Pumpkin and red bean soup with cashew
Effects: Nourishes the blood, strengthens the body. Relieves heart palpitations, dizziness and improves sleep quality.
Ingredients: 1/2 pumpkin, 2 carrot, 30g red beans, 30g cashews, 30g peanuts, 4 red dates
Preparation:
1. Rinse all ingredients thoroughly. Remove skin and seeds from the pumpkin and cut into pieces. Cut the peeled carrot into pieces.
2. Combine all ingredients with 2500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 2 hours. Add salt to taste.
Note: Those with excess heat should consume in moderation.

米奶 vs 米水
近年植物奶大行其道,米奶亦是其中一種,米奶和米水哪一種比較好?來了解一下吧!
🥛 甚麼是米奶?
米奶是由白米及水製成的仿奶製品,不含奶類成份,其營養來自白米,相比牛奶熱量較低,不含動物性脂肪,適合素食人士、乳糖不耐症患者及減肥人士飲用;惟注意升糖指數高,糖尿病人士慎飲。
自製米奶
材料:白米1杯、開水5杯
做法:白米洗淨,放雪櫃浸泡一晚。倒走浸泡的水,將米及開水以高速攪拌機攪成糊狀,如顆粒比較大,可用隔渣袋過濾米渣,即成米奶。
*米和水的比例可按個人喜好而定
*用白飯可省卻浸米時間
🍚 甚麼是米水?
米水是用紅米、白米及生薏米煲成的養生飲品,從中醫角度看,白米及紅米皆有補氣養脾胃功效,亦能除煩渴、長肌肉、止腹瀉,加入少量生薏米取其健脾袪濕功效,加強去水能力。米水可紓緩容易疲倦、食慾不振、面色偏黃欠光澤及身體浮腫等問題,由於屬性平和,男女老幼皆適合,唯薏米會令子宮收縮,建議孕婦不下薏米服用。
自製米水
材料:紅米2湯匙、白米半湯匙、生薏米半湯匙
做法:將材料洗淨,鍋內加入約800-1000毫升水,以武火煮滾後調文火煮20-30分鐘。
備註:天天煲,一天飲完,不要過夜

🥛 What is rice milk?
It is a milk substitute made of white rice and water. In other words, it does not contain dairy product. The nutrient of rice milk comes from white rice, and it is lower in calories. Homemade rice milk
Ingredients: 1 cup of white rice, 5 cups of boiled water
Method: wash the white rice and soak it in water overnight in the refrigerator. Pour away the water, and replace it with boiled water. Pour the mixture into a high-speed blender to turn them into a paste. Use a sieve to remove the large bits of rice and retrieve the rice milk.

🍚 What is rice water?
Rice water is a healthy drink made from red rice, white rice, and coix seed. White rice and red white can both replenish qi, strengthen the spleen and stomach, relieve excessive thirst, promote muscle growth, and alleviate diarrhea. Coix seed can strengthen the spleen and dispel dampness. Rice water can improve fatigue, poor appetite, yellowish complexion that is lacking shine, and bloating. Due to its mild nature, it is suitable for the entire family with the exception of pregnant women as coix seeds can cause uterus contraction.
Simple healthy rice water
Ingredients: 2 tablespoons red rice, half tablespoon of white rice, half tablespoon of coix seeds
Preparation: rinse all ingredients thoroughly. Combine all ingredients with 800-1000ml of water and cook on high heat until boiling. Turn to low heat and simmer for 20-30 minutes.
*Rice water should be made fresh daily and should not be stored overnight as it will spoil easily.
*For pregnant ladies, they can omit coix seeds.
*Those with diabetes should consult a nutritionist accordingly.

五指毛桃桑寄生南棗甜湯
功效:益氣養血,適合氣血虛弱人士,紓緩心悸、容易頭暈、月經不調等症狀。
材料:新鮮淮山1根、五指毛桃20克、桑寄生15克、南棗4枚、枸杞子10克、冰糖適量
做法:
1. 所有材料洗淨備用。
2. 鍋中加入1500毫升水,放入全部材料,武火煮至水滾,調文火煮1.5小時,最後下冰糖調味即可。

If an individual experiences dizziness, heart palpitation, shortness of breath, and numbness of the limbs, and her period blood is diluted, low in quantity, and pinkish red in color, then the person has asthenic qi and blood. Ingredients: 1 fresh Chinese yam, 20g hairy fig root, 15g, mulberry mistletoe stem, 4 south jujubes, 10g wolfberry, rock sugar to taste
Preparation:
1. Rinse all ingredients thoroughly.
2. Combine all ingredients with 1500ml of water in a pot and cook on high heat until boiling. Turn to low heat and simmer for 1.5 hours. Add rock sugar to taste.

モッツァレラチーズ(細切り) 100g

牛乳 100ml
片栗粉 大さじ1
作り方:
1.えびは尾をのこして殻をむき、背わたをとって腹側に5-6箇所切り込みを入れてまっすぐにする。片栗粉でもみ洗いし、しっかりと水気を拭き取る。
2.えびと豚バラ肉に塩・コショウを振る。えびに豚バラ肉を巻きつけ、手でぎゅっと握ってしっかりと固める。
3.ホットプレートにバターを置いて中火にかけて溶かしたら、(2) を並べて両面を焼く。
4.フライパンにモッツァレラチーズとチェダーチーズを入れて片栗粉をまぶす。全体が混ざったら中火にかけて、チーズが溶けてきたら牛乳を加え、チーズが溶けるまで混ぜながら温める。(3) の上にたっぷりとかけたら、完成!

INGREDIENTS
6 Shrimp (large)
6-12 Slices of pork belly
Salt Pepper
20g Butter
100g Mozzarella cheese (shredded)
100g Cheddar cheese (shredded)
100ml Milk
1 tablespoon Potato starch
PREPARATION
1. Peel the shrimp but leave the tail attached, remove the back and make 5-6 cuts on the ventral side to straighten it. Rinse with potato starch and wipe off any water.
2. Sprinkle salt and pepper on the shrimp and pork ribs. Wrap the pork ribs around the shrimp tightly.
3. Place the butter on a hot plate and heat it over medium heat to melt it, then line up (2) and cook on both sides.
4. Put mozzarella cheese and cheddar cheese in a frying pan and sprinkle with potato starch, mix well. Heat over medium heat, when the cheese melts add milk, and warm while mixing until everything is incorporated. Pour a generous amount of the cheese mixture on top of (3) and you're done!
5. Enjoy!

As the first dish for my new travel series recipes, I chose the Spanish Chorizo Clams, one of our favorites and must order tapas when in Barcelona. Please check out the link in my profile for the newest recipe!
This is a such a great and simple seafood dish to make at home. What’s best is it’s perfect with a nice crunchy baguette to soak up the garlic butter wine clam soup! Whenever Rachel and I travel, we plan our days around food. Where are we going to eat? How do we get there? What can we eat as a snack along the way? When I first ate this, I thought, “Should be easy, I am going to recreate this at home!” And it was! I hope you like this recipe!
Ingredients 食材:
0.5-1 kg of Clams - soaked in salt water for 30 minutes) (蛤蠣)
200 grams of Chorizo also known as Spicy Spanish sausages (西班牙香腸)
1/2 cup (15 pieces) of Garlic - sliced (大蒜)
1 cup of Cilantro - leaves only (香菜)
2 lemons or limes - halved and squeezed for juice, seeds removed (檸檬)
1/2 stick of unsalted butter (無鹽奶油)
1-2 tablespoons of paprika (紅甜椒粉)
1 glass of white wine (白酒)
3-4 tablespoons of olive oil (橄欖油)
Salt and Pepper - for taste (黑胡椒)
Finishing Ingredients 撒料調味
1/2 lemon (檸檬)
1/4 cup cilantro (香菜)
Fresh loaf of crunchy french bread (法國麵包)
STEP 1
Start by soaking the clams in salt water to clean the clams. While clams are soaking, start by cutting 1/2 cup (approximately 15 pieces) of garlic slices.

STEP 2
Prepare and cut chorizo slices. First remove the outer sausage skin covering by gently cutting along the sausage.

Prepare cilantro by removing the stem and using only the leaves. Also cut lemon in half to use for cooking.

On the stove, add in 3-4 tablespoons of olive oil and heat up your pan. I am using a cast iron pan because it cooks at a more even temperature.

When the oil is very watery in the pan and you see a little white smoke, it is hot enough. Add in garlic slices and stir to cook until slightly brown.
