I’m craving for Broken rice (cơm tấm) today. During the process of harvesting and transporting rice the grains are often damaged. In the past, these fractured grains were difficult to sell because most people preferred to eat the long, whole grain rice. With their broken rice unsold farmers traditionally used it as animal feed. However, food is rarely wasted in Vietnam and at some point farmers and poor families (who could afford the broken grain because it was cheaper) began to cook it for their own consumption 🌾. Nowadays it can be even more expensive than normal rice 😂

Steamed white broken rice is heaped onto a plate; sliced cabbage and cucumber adorn the edges – a palate cleanser which also adds colour to the dish. The grilled pork chop is the spotlight today, soooo juicy and flavorful 😋😋. Other toppings like Chinese sausage, chả (an egg, pork, mushroom and glass noodle ‘cake’) are options to customize your taste. However, the spring roll disappointed me a little bit because of the dull skin. .

Cơm tấm chắc có lẽ là lựa chọn không tồi đúng không? Ngày trước, trong quá trình thu hoạch và vạn chuyển, các hạt gạo bị rơi vỡ rất nhiều, làm việc mua bán khó khăn hơn vì mọi người đa phần đều thích ăn gạo dài nguyên hạt. Với những phần “tấm” không bán được, đa phần người nông dân sẽ mang làm thức ăn cho các con vật trong nhà. Nhưng mà ai cũng biết “hạt gạo - hạt ngọc” nên không thể phí phạm được, vì vậy với cách chế biến độc đạo và sáng tạo, chúng ta có cơm tấm nổi danh như ngày hôm nay 🌾.

Dĩa cơm nóng hổi, được sắp kèm thêm dưa leo và ít kim chi cải bắp, ăn kèm với sườn nướng thơm lừng, bì chả, lạp xưởng và trứng. Cái ngon của cơm tấm quyết định bởi sườn, phải thật mềm và thấm, tuy có nướng trên lửa than hồng nhưng không hề bị khô. Tuy nhiên ram ở đây vẫn chưa xuất sắc lắm vì lớp vỏ ngoài không còn giữ được độ giòn nữa.

取喜欢的耐热容器,涂上食用油,倒入粉浆糊
蒸60分钟
放凉,脱模

I’ve already cut half the amount of sugar, and it tastes fine, so think about the sweet new year’s cake out in the market! This version new year’s cake fresh out of the steamer is so soft and chewy, eating it on its own is super delicious! Put it sliced into the fridge for storage, and afterwards coating it before frying it when you want to eat it later. Crispy on the outside and soft on the inside, super awesome!
[Ingredient]
Glutinous rice powder 500g
Hot water 500g
Brown sugar 300g
[Method]
Add brown sugar in hot water, stir till all dissolved
Slightly cool down sugared water, stir in glutinous rice powder
Coat the mould you like with oil, add in mixture
Steamed 60 minutes
Cool down, remove from mould
