Very unusual and satisfying breakfast this morning:
Leek, bacon, and mushroom sourdough whole wheat pancakes;
home-fermented miso soup with tofu, wakame, and lobster tail;
boiled egg.
今早很不尋常但很滿意的早餐:
蒜苗培根磨菇酸酵種全麥煎餅 (昨晚拌好的麵糊);
自製味噌海帶芽龍蝦湯;
水煮蛋。

Sweet Potato Pancakes
Ingredients
1 medium – sweet potato
1 cup – milk
1/2 teaspoon – cinnamon
1 large – egg
1 cup – flour, whole wheat
2 teaspoon – baking powder
1/4 teaspoon – salt
1. Cook sweet potato
2. Blend first four ingredients in a blender, until smooth.
3. Whisk together the flour, baking powder and salt. Add the sweet potato mixture and stir just until combined.
4. Pour the batter onto a hot frying pan greased with butter. Flip the pancakes when the begin to bubble and are golden brown on both sides.
5. Serve with Honey or whatever you like :)

INGREDIENTS
1) 3 Medium Bananas
2) 2 Eggs
3) 1/3 cup Coconut Oil
4) 1/4 cup Coconut Milk
5) 1 3/4 cup Whole Wheat Flour
6) 1/2 tsp. Ground Cinnamon
7) 1/2 tsp. Salt
8) 1 tsp. Baking Soda
9) 1/2 cup Chocolate Chips & Chopped Walnuts
STEPS
1) Preheat the oven to 165°C / 330°F.
2) In a plate, mash the bananas with a fork until desired consistency.
3) In a bowl, mix coconut oil, coconut milk and eggs until well combined.
Add the crushed bananas into the bowl and continue mixing.
4) Then add whole wheat flour, ground cinnamon, salt and baking soda and gently stir until the ingredients are combined.
5) When the batter is thick, fold in the chocolate chips and chopped walnuts.
6) Pour the batter into the baking tray and bake for 50 minutes.
