法料Chef’s Table升二星 2021泰國米其林名單出爐
《曼谷、清邁、普吉與攀牙米其林指南2021》星級餐廳名單正式出爐，並同步公佈三個新獎項：「米其林綠星（MICHELIN Green Star）」、「米其林年輕主廚大獎（MICHELIN Guide Young Chef Award）」以及「米其林服務大獎（MICHELIN Guide Service Award）」。今年統計共有28家餐廳獲得星級肯定，其中一家餐廳晉升二星；兩家新入選、一家新晉升一星肯定。
《米其林指南》國際總監Gwendal Poullennec表示：「疫情的影響帶來了飲食產業的新常態，泰國許多大廚與餐廳更注重環境以及永續。我們很榮幸地新推出表彰在永續美食作法上模範先行者的『米其林綠星』、以及肯定在各自區塊貢獻與投入的『米其林年輕主廚大獎』以及『米其林服務大獎』。」
在6家三星餐廳當中，位於曼谷的法國料理餐廳「Chef’s Table」，由一星晉升二星。「Chef’s Table」的主廚來自法國羅亞爾河地區，供應現代法國料理。在空間的鋪陳方面也獨樹一格，將廚房設置在餐廳的最中央，憑著位於高樓層的優勢，可以俯瞰整個城市。評審員對「Chef’s Table」的評價是：「風味平衡絕妙，品味高超，使用一流食材。」
在22家二星餐廳中，有2家新入選，1家新晉升。提供來客世界級菜色的時尚法國料理餐廳「Blue by Alain Ducasse」，以及以及結合西方與亞洲料理，並透過現代與創新的菜色表現韓國藝術的創意料理餐廳「Cadence by Dan Bark」，同時新入選一星餐廳。壽司吧「Sushi Masato」以主廚餐桌的方式提供 「廚師發辦（お任せ，OMAKASE）」，優秀的廚師團隊從日本取得的最好食材製作料理。

This may not be a Michelin Star recipe, but it sure is one heck of a dish! Soya sauce chicken is a classic Cantonese meat dish.Cooked in a soy sauce mixture, the taste of the braised chicken is oh so good.
Braise it to perfection and paired with your Hong Kong noodles tossed in the braising sauce. We used chicken thighs instead of the whole chicken so there’s no need to fight on who gets the drumsticks ;-) When paired with your pickled green chillies, this makes for a sumptuous noodly dish. Cook this for your family over the weekend and enjoy the taste!
