🍞 Simple & Quick 🇩🇰 Dinner Roll! 🍞
💋 Was unexpectedly soft till i thought I've accidentally made brioche 😅
Ingredients :

➡ 200g wheat flour *
➡ 1/2 cup milk **
➡ 1 large egg
➡ 50g salted Danish butter (softened)
➡ 1/2 tsp yeast
➡️ 30g sugar
Optional- white sesame sprinkles
♨️ AF @ 150*C for 20mins
* Allows additional +/-25 g for dusting purpose in case the dough gets too sticky)
** Fresh Milk has run out so i substitute with 1:2 ratio of Milk Powder to Water

One Pot Sesame Oil Chicken Rice
Ingredients:
Serves 6 pax

60ml (2 fl oz) sesame oil
1 thumb-size young ginger (sliced thinly)
460g (16.2 oz or 1 lb) chicken thigh meat (cut into bite sizes)
2 tablespoons Chinese white rice wine (optional)
5 cloves garlic (sliced thinly)
A few dashes of white pepper
3 cups rice (use a rice cup to measure or a 210ml (7.1 fl oz) cup to measure)
2 tablespoons oyster sauce
1 teaspoon chicken stock powder (You can use chicken stock to replace water)
1.5 tablespoons premium dark soy sauce
3 cups water (use a rice cup to measure or a 210ml (7.1 fl oz) cup to measure)

今天要做的万用巧克力酱其实就是巧克力甘纳许,这个神奇的东西只需要2个材料,就可以做淋面蛋糕,巧克力酱,巧克力塔的內馅,还有巧克力奶油霜,甚至还能做成松露巧克力哦,它的实用性太高了,是我最常做的巧克力酱了。你一定不相信它的做法有多简单,一起来试试看吧。

PS:关于巧克力甘纳许的制作方法很简单,但是内含的原理比较多,这些我会在下面的注意事项里解释清楚,大家有兴趣的话可以看一下。
食材:
质地比较软的巧克力甘纳许比例为巧克力:鲜奶油是1:1,这个质地适合制作需要放在冰箱冷藏的巧克力酱,巧克力淋面蛋糕,巧克力奶油霜,巧克力塔, 松露巧克力。
巧克力豆(我使用的是60%可可含量)200g
动物性鲜奶油 200g
质地比较硬的巧克力甘纳许比例为巧克力:鲜奶油是 2:1,这个比例适合做可以放在室温保存的松露巧克力,还有质地比较硬的巧克力奶油霜,这个质地可以拿来制作婚礼蛋糕和3D立体造型的翻糖蛋糕。
巧克力豆(我使用的是60%可可含量)200g
动物性鲜奶油 100g
ingredient:soft chocolate ganache, the ratio is 1:1
chocolate chips (I use 60%cocoa)200g
heavy cream 200g
For a firmer chocolate ganache, the ratio would be 2:1
Chocoalte chips (60%cocoa) 200g
Heavy cream 100g
Tip:
1. 优质的巧克力原材料才能做出来好吃的巧克力酱,质量差一点的巧克力会用便宜的植物油取代天然的可可脂,口感较差。视频里我所使用的牌子是:Ghirardelli的 60%可可的黑巧克力豆,我也推荐Callebaut,如果使用其他的牌子,尽量选用50%-60%可可含量的巧克力,这个区间的可可含量是巧克力味道比较浓郁,同时一般人比较容易接受的苦甜程度。高于65%以上用于烘焙的话,不是很喜欢黑巧克力的人会觉得太苦,低于50%可可含量的巧克力,巧克力味道不会很浓也会比较甜。
2. 不同可可含量的巧克力融化后凝固的速度是不一样的,使用可可含量越高,凝固的速度越快,假设你使用的是50%的可可含量的巧克力豆的话,你的巧克力酱凝固的速度就会比我视频里所使用的60%时间慢哦。
3. 如果买来的巧克力原材料是一整块的话,要先用刀把巧克力切碎再使用哦,这样才能更好地融合。
4. 这个视频里的巧克力和鲜奶油的比例是 1:1,制作出来的巧克力甘纳许是比较软的质地,也就是你放在室温里,它是可以搅拌的,制作出来的巧克力奶油霜,或者松露巧克力是需要放冰箱冷藏的。如果你想要制作比较硬的状态,可以用巧克力:鲜奶油比例为2:1,这样可以制作出比较硬的奶油霜或者松露巧克力,是可以放在室温下保存,比较不容易融化。
5. 煮鲜奶油的时候,煮的程度是锅边缘冒泡泡,但是还没有完全沸腾,这个时候就可以停止加热了,不用煮到完全煮沸。
6. 在鲜奶油倒入巧克力的时候,不要立即搅拌,让鲜奶油完全盖过巧克力,然后先静置5分钟左右再搅拌,这样可以更均匀的融化巧克力。
7. 刚制作好的巧克力甘纳许,是液态的,这个时候可以做巧克力酱,淋在冰淇淋或者其他甜点上做装饰,也可以做淋面巧克力蛋糕。
8. 在室温放置2小时,巧克力的状态会变比较凝固,这个时候可以拿来做巧克力奶油霜,也可以用打蛋器打发,打大约4分钟,就会变成口感更轻盈、入口即化的奶油霜。
9. 在室温放隔夜或者放在冰箱两三个小时,这个时候巧克力甘纳许会比较凝固,这样的状态就可以拿来做松露巧克力了, 做松露巧克力的时候,我会用巧克力:鲜奶油2:1的比例,这个比例做出来的巧克力会口感会更硬一些。
10. 在做3D立体蛋糕的时候,用巧克力甘纳许把蛋糕装饰完放冰箱两小时后,蛋糕会变成非常坚硬的外壳,这个时候就很适合拿来盖翻糖,做装饰。
11. 巧克力甘纳许可以放室温保存48小时,冰箱冷藏1个星期或者密封冷冻保存6个月,保存的时候需要用保鲜膜覆盖表面,避免表面结痂形成一个薄膜。
失败的拯救方法:
1. 如果鲜奶油过烫,可能会造成甘纳许质感粗糙,出现颗粒状。如果出现这种状况,可以把这个巧克力甘纳许隔热水加热,或者放到微波炉30秒,搅拌知道它状态顺滑位置。
2. 如果巧克力没有完全融化,鲜奶油已经不烫了,可以放到微波炉加热30秒,再取出搅拌。
3. 如果搅拌的时候出现油水分离的情况,可以试着加一小汤匙温水或者温牛奶,继续搅拌直到融合。
4. 如果巧克力甘纳许的质地太硬了,可以加温的鲜奶油搅拌,调整比例。
其他巧克力甘纳许比例:
1. 牛奶巧克力甘纳许: 使用牛奶巧克力的时候,因为牛奶巧克力内含的可可含量比较低,相较于黑巧克力,牛奶巧克力的糖和乳固体的比例比较高,不容易凝固,所以牛奶巧克力甘纳许的比例为,牛奶巧克力2.5:鲜奶油1。
2. 白巧克力甘纳许: 由于牛奶巧克力是完全不含可可粉的,只含有可可油脂,还有奶粉和糖,所以在要使用它制作甘纳许的时候,比例要更大才能更好的凝固,白巧克力甘纳许的比例为, 白巧克力3:鲜奶油1。如果因为鲜奶油太少,没办法充分融化,可以放到微波炉30秒进行加热。

Passion Fruit & Mango Sorbet Recipe
☞ Serves 3-4
✎ Ingredients
☞ For mango puree
2-3 large mangos, 500g (peeled and stones removed)
2 passion fruits
☞ For simple syrup(we need 6~7 tbsp)
granulated sugar 100g
water 100g
✎ Instructions
☞ For simpe syrup
1. Add the sugar and water to a small saucepan over medium heat. Stir until sugar is dissolved or the temperature reaches to 105C.
2. Let the syrup cool, then pour into a bottle with a lid. Set aside.
☞ For mango puree
1. Wash the mangos, then peel the mango and cut into small cubes and place in a large bowl.
2. Cut the passion fruit in half , scoop out the seeds and pulp into a fine metal strainer placed over a bowl, use a spoon to push the pulp through the strainer, leave the seed behind.
3. Add the mangos cubes and passion fruit juice into a food processor, blend until completely smooth. Pour into a large bowl.
☞ For Sorbet
1. Gradually add simple syrup one tablespoon by one tablespoon and mix well each time, until it's sweet enough as you like. Sugar plays an important role in the sorbet. Less sugar will make the sorbet becomes icy. Add enough sugar will let the texture of sorbet more smooth.
2. Pour the sorbet mixture into a freeze-safe container. Freeze for 1hr until semi-solid.
3. Stir to break up the ice crystals, and returning to the freezer for another 1hr, totally you might need 4-6 times once an hour to break up the ice crystals.
4. Freeze overnight until firm.
5. Before served, let the sorbet sit for 20 mins at room temperature.
** If you're not sure how much sugar should be added in, you can try sorbet egg float test, the methods can find in video.
