外國超市裡的Soy milk喝起來比較像是稀稀的豆奶,與台灣豆漿店裡的豆漿味道差了十萬八千里。 經過好幾年的忍耐之後,我終於開始自己做豆漿。
由於沒有豆漿機跟果汁機,我就拿家裡一台小型切碎機來磨,效果還是很不錯的。成功聞到新鮮豆漿香氣的時候真的是感動到差點哭出來,一發不可收拾天天煮天天喝,甚至一鼓作氣拍了這支短片分享我的豆漿做法,希望可以造福其他想喝豆漿又喝不到的人!
| Ingredients 材料 |
Soybeans 黃豆 150g
Water 水 700g
Sugar 糖 隨意
*豆漿比例很多人說是1:10,但照我這樣做法調整到1:6.5 或1:7 比較好喝
甚至可以3(豆):7(水)
| Steps 作法|
1.150克的黃豆泡水 Soak 150g soybeans
2. 至少泡6-12小時 Let it stand for 6-12 hours
3. 將豆子瀝乾加入一點水打碎 Drain the beans and put them into a blender. Add a little water (from the 700ml)
*這裡的水請使用材料表裡的水(700ml),我都是直接一瓶700ml 準備在旁邊,這樣就不會忘記加多少。
4.打到滑順的泥狀 Blend until it looks like hummus
5.將豆泥放入豆漿袋 Pour the bean paste into a cotton bag
6.加入約300ml的水,用手把豆漿搓洗出來 Add some water, and “wash” the soy milk out
7.將洗好的豆漿倒入別的鍋子中,把剩下的水加完洗第二次 Pour the soy milk into another pot, add the rest of the water and wash again
*洗到後來會發現水越來越清澈,就知道豆渣們已仁至義盡了
8.充分搓洗後,將豆汁徹底擠乾 Wash for a couple of minutes and squeeze out all the milk
9.擠好的豆漿中火煮開 Boil the soy milk (watch out, it might boil over)
*這邊要顧爐,豆漿很容易瞬間漲出很多泡沫
10. 轉小火煮15-20分鐘 Turn down the heat, cook for another 15-20 mins
11. 視個人口味加糖 Add some sugar
