We are all familiar with fermented bean sauce and would usually cook it with minced meat or fish. This time round, I decided to try something different and use Man Kee Fermented Bean Sauce (Spicy) to cook with cucumber and luncheon meat.

𝐑𝐞𝐜𝐢𝐩𝐞: Stir Fry Cucumber with Luncheon Meat
𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴:
1 teaspoon Man Kee Fermented Bean Sauce (Spicy)
2 Japanese cucumbers, cut into pieces and add salt
150g luncheon meat, cut into pieces
10g dried chilli
1 red chilli, cut into pieces
5g onion, cut into pieces
2 garlic, chopped
2 shallots, chopped
2 teaspoon chilli oil
𝘔𝘦𝘵𝘩𝘰𝘥:
1. Lightly pan fry luncheon meat till golden brown. Remove from pan.
2. Sauté garlic and shallots in a wok.
3. Add in Man Kee Fermented Bean Sauce (Spicy) and stir well.
4. Add in dried chilli, red chilli and onion.
5. Add in cucumber and luncheon meat. Stir well and serve immediately with steamed rice.

Yong Tau Fu 酿豆腐 is a well known dish in the Hakka cuisine. It is a unique Chinese dish that is made of pork(originally), mackerel fish, tofu, and a variety of soy products and vegetables. Today, I am going to show you how to make Mel's style Yong Tau Fu and the various ways to use the stuffing/paste.
Because Max doesnt like fish, I am preparing the chicken version for him. It is not normal at all, but it works. We have also made brown rice Chee Cheong Fun and bean sauce to go with them.
As a child, growing up seeing my Poh Poh heating the chop board so hard with the fish paste, I was curious what she was doing. Luckily I still remember how she did it. I tried some years ago and started to add ingredients to make them more interesting.
Ingredients for the stuffing/fish paste:
. 1 mackerel fish with head and tail
. 1 kg Minced Chicken (if you plan to stuff the fish and make fishless YTF)
. chopped water chestnuts
. chopped onion
. shredded carrots
. chopped spring onions
. mashed garlic
. mashed ginger
. chopped coriander
. chopped shiitake mushroom
. oyster sauce
. soy sauce
. white pepper
. sesame oil
. salt
. 1 strip of salted fish in oil
For the vegetable and tofu for stuffing, you can get any kind of fried tofu, beancurd skin, hard tofu, bell pepper, big red and green chilis, lady fingers, eggplants, normal size bittergourd (I didnt have it then), mushrooms and any possible vegetable that can hold the stuffing to try out.
You can actually get the black bean sweet sauce from the market or just make your own.
Simplest Recipe Ingredients:
. 2 tbsp hoisin sauce
. 2 tbsp oyster sauce
. a bit of hot water
- Mix them all up and serve.
Once you stuffed the vegetables and tofu, you can pan-fry them like I did or steam them and then fry in pan again. Either way works.

材料:
急凍西班牙豬扒 2-3磅
香茅 2-3條
蒜頭 1個(切片)
紅葱頭 數粒(切片)
南薑 1段(切片)
魚露 1小碗
胡椒粉 適量
糖 適量
蠔油 2湯匙
水 適量
做法:
1.豬扒融雪洗乾淨,切厚件索乾水備用
2.所有材料放在大碗中拌勻,加入適量水調味
3.放入豬扒撈勻,再放入雪櫃冷藏,可以醃過夜更好
4.取出豬扒,所有料頭汁不要
5.燒紅鑊加少許油,如果用易潔鑊,豬扒夠油有脂肪,可以毋須加油直接落鑊煎
6.先煎香兩面,然後上蓋以中火半煎焗,豬扒煎熟後,可以調高火煎至兩面焦香
7.切件上碟
Ingredients:
Frozen Spanish pork chops 2-3 lbs
Lemongrass 2-3 pcs
Garlic 1 head, sliced
Shallots Several pcs, sliced
Galangal 1 section, sliced
Fish sauce 1 small bowl
White pepper Some
Sugar Some
Oyster sauce 2 tbsp
Water Some
Steps:
1. Defrost pork chops, clean, cut into thick pieces, pat dry, and set aside.
2. Add all ingredients into a large bowl, mix well, add water to taste.
3. Add pork chops to the bowl and mix well. Cover and leave in the fridge to marinate, best to leave overnight.
4. Take out pork from the fridge, remove the marinade sauce.
5. Heat pan with a little bit of oil, or do no add any oil if using non-stick pans as the pork has fat also, add pork chops to heated pan.
6. First pan-fry both sides of the pork chops to brown, then cover to cook in medium heat. Once the pork chops are cooked, increase heat to large, and brown the two sides of the pork chops.
7. Remove from heat, cut into pieces and serve.

Pan-fried Stuffed Bell Peppers (English Recipe)
Ingredients:
Fish paste - $20
Chopped spring onion - Some
Green bell pepper - 0.5 pc
Yellow bell pepper - 0.5 pc
Red bell pepper - 0.5 pc
Sliced Ginger - 2 slices
Cornstarch - Some
Salt - 1 tsp
Light soy sauce - 2 tsp
Sugar - 1 tsp
Cornstarch - 2 tsp
Water - 1 cup
Method:
1. Add 1 tsp salt and some chopped spring onion to the fish paste and mix well.
2. Sprinkle the bell peppers (removed seeds and cut into pieces) with a thin coating of cornstarch.
3. Stuff fish paste.
4. Heat little oil in a pan. Saute the ginger slices.
5. Pan fry the fish paste over medium heat until they turn golden brown.
6. Pan fry the other side for 2 minutes.
7. Add 1/2 cup of water. Cook with lid covered, for 30 seconds.
8. Add 2 tsp light soy sauce, 1 tsp sugar, 2 tsp cornstarch and 1/2 cup of water into a bowl. Set aside.
9. Add all the seasonings into the pan. Cook until sauce is thickened.
10. Spread on a plate and drizzle with sauce. Serve.
