正當我無法決定應該再要與大分享哪個食譜時,我在 Instagram 上留意到來自 Crystal Leung @zerowaste_newbie 的三則通知,她是住在澳洲的一位可愛讀者。
她在台灣時從一間書店買到我的素食書。她說:「謝謝妳寫這本書……我已經從中試做了很多食譜 …… 它給了我很多靈感和啟發。」
Crystal 和她的女兒,美麗的母女二人組,已一起創造了許多令人讚嘆的美食和手工。」她們分享在 Instagram 上参考我書內其中三道食譜做成的美味菜式:扁豆蘑菇義大利麵,農舍派和椰香雜菜腰果咖哩。
之後,我又收到來自 Wrexham 一位可愛顧客 Kathryn Howard 的另一則訊息。她也做了椰香雜菜腰果咖哩。她說:「謝謝妳分享的食譜,真好吃!」

I couldn’t decided which recipe I should be sharing with everyone, then I noticed three notifications on Instagram from Crystal Leung, @zerowaste_newbie, a lovely reader who lives in Australia.
She bought my book from a book store whilst she was in Taiwan. She said,“Thanks for writing this book … I have been making many recipes from it already …. it gave me lots of inspiration.”
Crystal and her daughter, the beautiful mother and daughter duo, have been making lots of amazing things together. They shared the three dishes they made from my book on Instagram : Mushroom & lentil Bolognese, Cottage Pie & Creamy Cashew Nut Coconut Vegetable Curry.
And then I received another message from Kathryn Howard, a lovely customer from Wrexham. She made the Creamy Cashew Nut Coconut Vegetable Curry too. She said,“ Thank you for sharing the recipe, it was delicious!”

昨天傍晚最令人震憾的新聞就是英國首相 Boris Johnson 在他的冠狀病毒症狀惡化後,住進了 ICU 加護病房。
大家都在為 Mr Johnson 祈禱,希望他平安渡過危險期,早日康復出院!
此時此刻,更深心感到只有人民和政府合作,團結一致,好好留在家中、盡量減少外出,才有辦法戰勝疫情。

這是我煮過的咖哩之中,我先生最喜歡的一款,做法非常簡單卻十分美味!
辛辣的香料味道被打得幼滑的腰果奶油和香軟的椰奶所平衡。檸檬、番茄膏和椰奶優格的少許酸味被菩葡乾和地瓜的甜味所包圍。
馬鈴薯、茄子和白花椰入口輕軟,四季豆爽嫩增添香脆口感。
我衷心推薦大家一定要試做嚐嚐!在這居家隔離期間,是一道最適合也最容易為全家烹煮的美味家庭菜。如果是為小孩子做的,可以不放入辣椒片,又或者可選擇任何你喜愛蔬菜同煮。

材料 (4-6 人份)
(A) 蔬菜 :
馬鈴薯 500g
地瓜 250g
白花椰 350g
中型茄子 1 條 (約 300g)
四季豆 200g
海鹽 1 小匙
橄欖油 1 大匙
(B) 綜合咖哩粉 :
咖哩粉 1 大匙 (任何種類,我用tikka masala)
薑黃粉 1 大匙
煙紅椒粉 1 大匙
肉桂粉 1 小匙
乾辣椒籽 1⁄2 小匙 (可不加)
(C) 醬汁 :
茴香頭 (或洋葱) 1 個
薑塊 指頭大小
小紅辣椒 2 支
番茄膏 (tomato purée) 2 大匙
生腰果 1⁄2 杯
葡萄乾 1⁄2 杯
椰奶 1 罐 400g
檸檬汁 2 大匙
椰奶優格 1 杯
糖 1 1⁄2 大匙
有機蔬菜高湯塊 1 塊
蔬菜高湯 1 1⁄2 杯
鹽 適量
橄欖油 1 大匙
烤腰果、檸檬角、香菜 隨意 (上桌伴盤之用)
做法 :
1.) 馬鈴薯、地瓜去皮洗淨。茴香頭 (或洋葱)切細角。薑塊磨成泥。紅辣椒去籽切成細絲。
2.) 葡萄乾放入溫水中浸軟,約 10 分鐘,瀝乾。
3.) 將馬鈴薯、地瓜、白花椰、茄子分別切成 2.5 公分左右小塊,四季豆切段。全部放進湯鍋中,下水蓋過,加入 1 小匙鹽、1 大匙油,用大火滾開後轉小火煮 10 分鐘,撈起進大碗中,煮菜湯盛起備用。
4.) 原鍋中火燒熱下油 1 大匙,加入茴香角炒至香軟、下辣椒絲、薑絲炒香。
5.) 把鍋移離爐火,加入番茄膏和綜合咖哩粉一起拌勻,放回爐上拌炒 1 分鐘 左右。
6.) 下椰奶 (然後注水滿空罐摇匀後把水也加入鍋內)、腰果、檸檬汁和 11⁄2 杯高湯 (高湯做法:將 1 1/2 杯煮菜湯加入一個量杯內,加進一塊蔬菜高湯塊拌勻),用大火煮滾後,再加蓋 以小火煮 5 分鐘至腰果軟熟成咖哩汁。
7.) 把咖哩汁放進攪拌機攪打至細滑,倒回湯鍋中,加進蔬菜、葡萄乾、 糖和優格拌勻,以小火煮開,小心攪拌。如太稠的話,可多加優格或煮菜湯調至濃稠度合度便成,試味看有否需要加鹽,我自己則覺得不需要。
8.) 以烤腰果、檸檬角、香菜伴盤上桌,佐以印度香米飯或椰奶飯。

First time tasting this iconic MTR1924's RAVA IDLY. It's made from roasted semolina mixed with curds flavouring it with masala seasoning finished with coriander, cashew nuts, curry leaves, & mustard seeds. Goes well with the green chilli-infused chutney and perfect to mop up the creamy potato curry too.

This particular food item was invented by its founder, Yagnanarayana. During World War II when India was hit by the great Bengal famine resulting in the short supply and rationing of rice, Yagnanarayana modified his idlis with semolina flour (rava) to replace the rice idly turning them into a filling and healthy steamed savoury cakes that go down in history.

It has been a while that I haven't had a good lasagne since I came back from traveling in Italy. So I decided to make a lasagne, BUT not a traditional one.
I made a Creamy Cashew Coconutmilk Sauce with lasagne, and this is a vegan recipe! Everyone can enjoy it!
*Sorry again I forgot and used the bacon in the video:( We can use Tofu instead or you can just skin that step:)
