The secret to mama’s cooking : a bunch of butter, veggies and love!
A friend asked me the other day what was an easy favorite recipe I made and J answered immediately roast chicken rice!
It’s a one-pot fail-proof happy that feeds a small or large crowd, is always a hit at play dates, and makes for delicious leftovers.
Just slather a bunch of veggies and drumsticks with a random selection of your favorite spices, melted butter, fish sauce (secret ingredient!!), salt and pepper.
In this batch, I used italian herbs, cinnamon, sage, celery salt, onion powder and some fresh rosemary and thyme.
Layer the veggies at the bottom, fresh herbs in the middle, and drumsticks on top. 400f or 200c in the oven for one hour.
As the chicken cooks, the drippings will flavor the veggies but because it sits on top, it will still brown nicely without braising in the veggies as the juices explode into yummy goodness.
The ultimate kicker?
After you’ve spooned out all the veggies and chicken (discard the herbs), mix all the drippings/sauce into a hot pot of rice and it is the most flavorful side dish bursting with flavor!
Tender chicken, an assortment of veggies, rice so good you can eat it on its own...all in under an hour.
HECK. YES.

CHICKEN POT PIE
Ingredients:
Filling:
2 tablespoons canola oil
1 onion, chopped
1 celery rib, thinly sliced
1/2 red bell pepper, seeded and diced
1/2 cup all-purpose flour
2 chicken cubes + 3 cups water
1 cup nonfat milk
1.3 kg boneless, skinless chicken breasts, cut into 1-inch pieces
1 cup frozen peas
2 carrots, diced
Salt and pepper
Topping:
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons unsalted butter, cut into small pieces
2 tablespoons canola oil
1 cup plus 2 Tbsp. nonfat milk
Preparation:
1. Make filling: Warm oil in a large skillet over medium-high heat. Add onion, celery and bell pepper and cook, stirring often, until softened, about 7 minutes. Add flour and stir for 1 minute. Pour in broth and bring to a boil, scraping browned bits from bottom of skillet, until mixture is thick and creamy.
2. Reduce heat to medium-low and stir in milk. Add chicken and cook, stirring, until firm and opaque, about 7 minutes. Stir in peas and carrots. Season with salt and pepper. Pour into a 2-quart baking dish.
3. Make topping: Preheat oven to 425°F. In a food processor, pulse flour, baking powder and salt. Add butter and pulse until mixture resembles coarse meal. With processor on, add oil and 1 cup milk. Process just until dough forms a ball. Turn out onto floured work surface; knead for 10 seconds. Roll dough to 1/2-inch thickness. Use a 2-inch cookie cutter to form 16 biscuits. Place biscuits on top of filling and brush with remaining milk.
4. Bake pot pie until filling is bubbling and biscuits are lightly browned on top, about 25 minutes. Serve hot.

1.蔥油地瓜葉
材料:
地瓜葉 300克 leaf of sweet potato 300g
油 1大匙 oil 1tbsp.
油蔥 1大匙 crisp shallots 1tbsp.
醬油膏 1大匙 thick soy sauce 1tbsp.
做法:
1.將市售油蔥1大匙和醬油膏1大匙拌勻後備用。
2.水滾後先加入1大匙油,再放入清洗好的地瓜葉,稍微攪動,讓油均勻地在地瓜葉表面。待水滾後即可取出。
4.最後將地瓜葉和備用的醬料拌勻即可。
2麻油乾拌麵
材料:
薑片 30克 Sliced ginger 30g
麻油 2大匙 Sesame oil 2 Tbsp.
醬油 1大匙 Soy sauce 1 Tbsp.
蔥花 10克 Chopped green onion 10g
小白菜 適量 Bok choy
陽春麵 2捆 plain noodle 2
作法:
1.開小火加入麻油和薑片,待薑片微微縮小後加入醬油和糖,拌勻後取出即可。
2.煮麵時先加入少許鹽和油,待麵體軟化後,加入小白菜再煮1分鐘即可取出
3.海鮮泡飯
料理祕訣:先煮湯頭,後放隔夜飯,才能煮出粒粒分明的泡飯。
放下隔夜飯煮滾 粒粒分明就是經典泡飯
材料:
水600ml water
隔夜飯一碗 overnight cooked-rice 1 bowl
海鮮包1包 seafood mix 1
調味料:
蔥花15公克 scallion 15g
醬油1茶匙 soy sauce 1tsp.
鹽1/4匙 salt 1/4tsp.
薑5公克/ginger 5G
作法:
先煮湯底,大火水滾後,依序放入海鮮、醬油、鹽、
隔夜飯,均勻攪拌,滾後撒蔥花即可。
4 蒸雞腿+蔬菜湯
蒸氣強,雞肉鮮嫩不柴口感好
A/蔬菜雞湯
材料:
高麗菜200g cabbage
紅蘿蔔50g carrot
西芹50g celery
洋蔥80g onion
番茄60g tomato
水900㏄ water
調味料:
鹽1茶匙 salt 1tsp.
黑胡椒少許 black pepper powder
B/蒸雞腿
材料:
大雞腿1支 chicken thigh
薑片15g ginger
蔥花少許 scallion qs.
醃料:
鹽適量 salt
米酒適量 cooking rice wine
作法:
1.雞腿較厚處切刀(較易熟),抹上適量米酒和鹽。
2.電火鍋開Ⅱ大火力將水煮滾,放入所有蔬菜與調味料。
3.放上蒸籠,擺入雞腿和薑片,蓋上鍋蓋。
4.待蒸氣孔冒出蒸氣,即改Ⅰ小火,蒸煮約30分鐘即可。
5.取出雞腿剁塊,撒上蔥花即可。
5番茄炒蛋
小技巧-番茄加番茄醬,雙重風味色澤漂亮
材料
番茄 350公克 tomato 350g
雞蛋 5顆 egg 5pcs
蔥粒 20公克 scallion 20g
糖 1茶匙 sugar 1tsp.
番茄醬 3大匙 ketchup 3tbsp.
水 100ml water 100ml
太白粉水 2大匙 thicken sauces 2tbsp.
作法
1. 熱鍋,倒入1大匙油,倒入打散的蛋液拌炒至凝固,取出備用。
2. 原鍋再加入1茶匙油,放入蔥粒炒香,再加入番茄與番茄醬炒勻。
3. 加入水煮滾,加入糖調味。
4. 再加入太白粉水勾芡後,放回剛剛取出的炒蛋及蔥花拌勻即可。
6.麻油荷包蛋
材料
雞蛋 5顆/eggs 5pcs.
胡麻油 1大匙/ sesame oil 1tbsp.
薑絲 15公克/ginger 15g
枸杞 10公克/ goji berry 10g
水 200公克/water 200g
米酒 100公克/ cooking rice wine 100g
調味料
鹽 1/2茶匙/salt 1/2tsp.
作法:
1. 鍋中倒入麻油後加熱,打入雞蛋,煎至蛋白邊緣微焦,對折將蛋黃包起。
2. 煎至蛋定型成荷包狀,蛋黃半熟後取出。重複將蛋煎完後取出備用。
3. 原鍋放入薑絲,炒至薑絲焦香且香氣散出。
4. 放入水、米酒煮滾,再放入蛋和枸杞,小火煮約2分鐘,加入鹽調味即可。

1.煮白飯
材料
洗淨的米 1杯/rice 1cup
水 1杯/water 1up
作法:
1.將洗淨的米放入內鍋中,加入水。

2.滷豬腳
材料:
豬腳(汆燙過) 1000公克/pigs feet 1000g

水 300公克/water 300公克

作法:
1.將豬腳、所有的材料放入內鍋中。
2.再將內鍋放入鍋中,蓋上鍋蓋,設定【雞鴨排骨】,煮至洩壓完成。
3.設定【開蓋收汁、15分鐘】,煮至豬腳醬汁濃郁收汁即可。
3.清燉牛肉
材料
牛腱(汆燙過) 800公克/ leg beef 800g
薑片 15公克/ginger 15g
芹菜 20公克/ Chinese celery 20g
洋蔥 50公克/onion 50g
水 500公克/water 500g
米酒 2大匙/cooking rice wine 2tbsp.
調味料:
鹽 適量/salt q.s.
作法:
1.將所有的材料放入內鍋中。
2.蓋上鍋蓋,設定【牛羊肉類】,煮至洩壓完成。
3.開蓋加入鹽拌勻調味即可。
4.紅豆湯
材料:
洗淨的紅豆 3杯/adzuki beans 3cups
水 4.5杯/water 4.5cups
二砂糖 適量/demerara sugar q.s.
熱水 適量/hot water q.s.
作法:
1.將洗好的紅豆放至鍋內豆類顆度。
2.加水至豆類max線。
3.蓋上鍋蓋,設定【豆類蹄筋】,煮至洩壓完成。
4.挖出適量煮好的紅豆,加入二砂糖、熱水拌勻即可。
5.糙米飯
材料:
洗淨的糙米 3杯/brown rice 3cups
水 4.5杯/water 4.5cups
作法:
1.將洗淨的糙米放入內鍋中,加入水。(加水至內鍋玄米刻度)
2.蓋上鍋蓋,設定【雜糧飯】,煮至洩壓完成。
3.開蓋將飯翻鬆、讓水氣散出即可。
6.雞肉粥
材料
洗淨的米 0.5杯/rice 0.5cup
雞肉 100公克/chicken 100g
泡發香菇 50公克/ shiitake mushroom 50g
蓮子 20公克/ lotus seeds 20g

作法:

10.蒸包子
材料:
冷凍包子 3顆/ bao 3pcs
作法:
1.外鍋加入0.5杯水,擺上蒸架。
2.放入包子,蓋上鍋蓋。
3.選擇壓力時間調節2分鐘,蒸至時間結束、洩壓完成即可。

Bahan-bahan (Sup Pedas)
1 biji bawang merah
3 ulas bawang putih
1 pkt pes asam pedas
3 sb pes tomyam
3 sb gula
2 sb serbuk stok ayam
1.5 ml air
1/2 batang lobak merah
1 batang saderi
2 cwn air
Bahan-bahan (Oden)
mee udon
brokoli
cendawan enoki
sosej
bebola ikan
bebola ketam
kek ikan
Cara memasak
1. Dengan menggunakan lidi sate, cucukkan kesemua bebola dan brokoli pada lidi.
2. Kisar halus bawang merah, bawang putih, lobak merah dan batang saderi bersama dua cawan air.
3. Tuangkan bahan kisar tadi ke dalam periuk dan masak sehingga mendidih.
4. Masukkan pes tomyam dan pes asam pedas.
5. Kacau seketika. Perisakan dengan gula serta serbuk stok ayam.
6. Tuangkan air dan masak lagi sehingga air menggelegak. Kemudian, masukkan bahan-bahan oden.
7. Masak seketika dan Oden Viral dan Sup Pedas Ala-Ala Jepun siap untuk dihidangkan.

This homemade Oden is easy to make and with the same price you will get bigger portion rather than you buy it at shop. Really worth it !
Japanese-Style Oden & Spicy Soup Recipe
Ingredients (Spicy Soup)
1 whole red onion
3 cloves garlic
1 packet asam pedas paste
3 tbsp of tom yam paste
3 tbsp of sugar
2 tbsp of chicken stock powder
1.5 ml water
1/2 carrot
1 stick celery
2 cups of water
Ingredients (Oden)
udon noodles
broccoli
enoki mushroom
sausage
fish ball
crab ball
fish cake
Cooking methods
1. Using skewers, slide all the balls and broccoli onto stick.
2. Finely blend the red onion, garlic, carrots, and celery with two cups of water.
3. Pour ground ingredients into a pot and cook until simmering.
4. Add in tom yam paste and asam pedas paste.
5. Stir well and season with sugar and chicken stock powder.
6. Pour in water and cook until bubbling. Then, add in oden main ingredients.
7. Cook for awhile and Japanese-Style Oden & Spicy Soup is ready to be served.
